Seasonal Cooking and Market Musings from Amy Fritch
Rouse your Roasted Veggies with this Mean Green Sauce
I love fall, especially at the market—it feels like *everything* is in season now (ok, we won’t talk about asparagus and strawberries). My go-to method to prepare all this bounty is to roast all the vegetables with olive oil, salt, and pepper. But lately, I’ve felt like I’m in a bit of a roasting rut, so this week I decided to make the meanest, greenest, weirdest sauce I could come up with and I am now hooked: no more naked roasted vegetables! It’s simple to whiz together the sauce while your veggies are roasting and dress them while they’re warm.

For the sauce:

1/2 cup parsley
1/2 cup cilantro
1/4 cup olive oil
1/4 cup walnuts
1 Tbsp rice vinegar
1 Tbsp nutritional yeast
1 small shallot
1 clove garlic
Juice of one lemon
Pinch salt

In a food processor or blender, add all the sauce ingredients and blend until smooth.

Pour over roasted vegetables such as cauliflower, potatoes, radishes, turnips, carrots, or whatever you like!
FRESH PICKS OF THE WEEK
From the Field
Salvaterra's Gardens
Swiss chard and fennel have made their fall return to Salvaterra's! Try this recipe for Swiss Chard, Fennel and White Bean Gratin. It's creamy, comforting and a little bit decadent...perfect to pair with a crusty loaf of Apple Ridge bread and perhaps a glass of Tolino wine!

This week's full line-up includes: lettuce mix, arugula, kale (green curly, red curly, tuscan), collards, head lettuce (red leaf, green leaf), scallions, red beets, carrots, hakurei turnips, green cabbage, red cabbage, broccoli, yellow onions, red potatoes, gold potatoes, slicing tomatoes, cocktail tomatoes, eggplant, cilantro, parsley, dill, poblanos, jalapeños, bell peppers and sweet Italian frying peppers (red and yellow), butternut squash, apples and pears.
Cabbage Throw Farm
It’s been getting spooky at Cabbage Throw Farm, just in time for Pumpkins and Pooches! Garlic and winter squash are the stars of the week. It’s garlic planting time and also a great time to stock up on some extra to ferment or store (especially since there is no farmers’ market next week).

Winter squash varieties include sweet honey nuts and autumn frosts. Both are delicious roasted and made into soup, sauce or roasted together with roots and sautéed greens. Other veggies this week include beets, carrots, napa cabbage, specialty radish, turnips, spinach, baby greens, lettuce, romaine, gem romaine, herbs and more.

Phillips Farms
Just in time for Halloween… pumpkins at Phillips Farms! Many shapes and sizes for all of your decorating and carving needs. This warm weather means that Phillips Farms still has a huge lineup of fresh produce at this week’s market: zucchini, cucumbers, Jersey tomatoes, radishes, green beans, eggplant and lettuce plus all your Autumn favorites including Brussels sprouts, broccoli, winter squash, fennel, celeriac, parsnips, spinach, cauliflower, sweet potatoes, carrots, kale, swiss chard, beets, leeks, fresh herbs, onions, potatoes, garlic and more. Apple varieties currently include Evercrisp, Honeycrisp, Ambrosia, Gala, Fuji, Macoun, Mutzu, Winesap, Jonagold and Suncrisp as well as Asian pears, Bartlett pears and Bosc pears. Your shopping trip won’t be complete without some freshly pressed Apple Cider and fresh bunches of fragrant Eucalyptus.
Scholl Orchards
Cauliflower and romanesco (always a stunner) arrive this week at Scholl Orchards! Try this recipe for Pan Roasted Romanesco with Hazelnuts and Crispy Bits.

Botanicals
Teels Hill Soapworks
Folks are definitely intrigued by Teels Hill's Bacon Soap. Not sure I want to smell like bacon but I know my dog wouldn't mind! Haha. But let me share with you the benefit of using lard on your skin. Lard is rich in Omega 3, Vitamins A and E - all great for those with skin ailments, acne or psoriasis, to name a few. Pigs are also said to absorb a lot of Vitamin D - which gives your skin a healthy glow. We are not doing Bacon Fest this year but I do have my bacon soap with me every week if you'd like to try a bar or two. Makes a great holiday gift too!

This Little Piggy Went to Market...

Ten years ago the Easton Farmers' Market launched the very first Bacon Fest. Nine thousand people converged on Centre Square that day, taking us all by surprise. It was the biggest crowd the market had ever seen. The fest grew by leaps and bounds and in its fourth year it separated from EFM and became its own event. Today PA Bacon Fest is operated by the GEDP Events Dept. and attracts 80,000 people over the course of two days. What started on a whim has grown to be one of the Mid-Atlantic region’s most popular events. Parade.com named it one of the country’s ‘5 Can’t-Miss Bacon Festivals’ and Fest300.com put it on the list of the top 300 festivals in the world! Easton is now famous for bacon!

Breakaway Farms is still a centerpiece of the fest; now offering over 50 varieties of pasture raised bacon. And EFM continues to operates the Farm-to-Fest Culinary stage. But most important, PA Bacon Fest has become the Greater Easton Development Partnership's largest fundraiser. Proceeds benefit the following GEDP programs: Easton Public Market, Easton Farmers’ Market, Easton Main Street Initiative, Easton Garden Works, the Easton Ambassadors, West Ward Community Initiative, Easton Compost Program and more! Funds raised through PA Bacon Fest support free events and programming in Easton throughout the year, including; Easton Out Loud, Live at the Falls concerts and many others.
