News You Don't Want to Miss!

Annual Ice Harvest

Our annual ice harvest began on Thursday and wrapped up on Sunday last week after four bitterly cold but beautifully sunny days on Squam Lake. With temperatures well below zero, about 26 dedicated crew members worked out on the ice field and in the ice houses, while another eight kept everyone fueled with hot food and warm drinks throughout the day.

Thanks to their hard work, both icehouses are now filled to the brim with freshly harvested ice - around 3,000 ice cakes - for the summer ahead. The Rock ice house holds eight layers, while the Deep ice house holds nine. Each ice block measures approximately 15.5" x 19.5" x ice depth; this year, the ice reached an impressive 16 inches by Sunday, with blocks weighing around 154 pounds each.

We were also happy to welcome nearly 100 visitors during designated viewing hours. Thank you for helping us keep this tradition safe and special for everyone.

Be sure to watch the Ice Harvest video on RDC’s YouTube channel and check out our social media for more photos and behind-the-scenes moments.

Please see below for our crew’s favorite breakfast muffin recipe.

Ice Harvest Favorite Breakfast Recipe

Egg, Ham & Cheese Biscuit Muffins (Makes 16)

A warm, hearty Ice Harvest classic—perfect fuel for cold winter mornings.

Ingredients:

Diced ham (or bacon or sausage)

Shredded cheese

8 eggs

1 can Grands Layer Biscuits

Scallions, chopped

Instructions:

Preheat oven to 375°F. Prepare a silicone muffin pan (if using a metal pan, line cups with paper muffin liners). Separate each biscuit into thirds by gently pulling apart the layers, and press one third into each muffin cup.

Add 4 to 5 pieces of meat to each cup, then pile the cheese on top. Scramble the eggs, then pour them over the filling until covered. Sprinkle with chopped scallions.

Bake for about 25 minutes, until the biscuit edges are golden brown and the eggs are set. Serve warm with a slice of crispy bacon—and a smile.

Gluten-Free Variation:

Skip the biscuit and add the ham, eggs, cheese, and scallions directly into the muffin cups. Baking time may be slightly shorter, so keep an eye on them.

Building Project Update

Even in the cold winter weather, work continues on our improvement projects around RDC. Construction has begun on the new Rock pump house/woodshed that will hold a water tank for a fire sprinkler system, with the foundation laid last month between Ma Bell and the Sap House. Once completed, this system will serve both Rock Dining Hall and Greenwood Lodge.

We’ve also started bathroom upgrades at Ondawa in Deephaven. And yes—sometimes progress looks a little whimsical… what do you think about a bath under the stars?
