Happy New Year!!!!


As you and your family start this year, think about the word ‘commitment’. Commitment can be defined as the state or quality of being dedicated to a cause, activity, etc. On this journey of life, we will set out to achieve a goal, and along the way challenges will arise.


The key to achieving our endeavors is to be willing to commit. The question is what are we committing to? Are we committing to the goal or are we committing to the process and the One who gave us the dream?


There will be times during this year, just like in previous years, when situations arise and you may become discouraged. I encourage you to stay committed to the process and the One who provided you with the dream, God.  


Totally Committed


Trust in the Lord with all your heart, and do not rely on your own insight. In all your ways acknowledge him, and he will make straight your paths.

Proverbs 3:5-6


It is easy to believe we know what is best for us; it is our life. However, everything we know is not all there is to know. In other words, there is always more we can learn despite our level of intellect or knowledge. It is one thing to have knowledge but another thing to know how to utilize that knowledge in the best way.


God has a different way of looking at situations than we do from our human perspective. When we try to consider situations from our vantage point, we are limited. The writer of this great proverbial text informs us we should trust God with our whole hearts. The writer is encouraging the reader to believe in God’s way and not our own. As a result, God will direct us in the way he would have us to go. Are you totally committed to God? If not, why?

INGREDIENTS


  • 2 cups shredded green cabbage


  • ¼ cup coarsely chopped fresh cilantro


  • 1 scallion, thinly sliced


  • 5 tablespoons lime juice (from 2 limes), divided 


  • 1 tablespoon avocado oil


  • 1 large avocado


  • 2 tablespoons sour cream


  • 1 small clove garlic, grated


  • ¼ teaspoon salt


  • 1 large egg white


  • ⅓ cup dry whole-wheat breadcrumbs


  • 1 tablespoon chili powder


  • 1 pound skinless mahi-mahi fillets, cut into 2- to 3-inch strips


  • Avocado oil cooking spray


  • 8 (6 inch) corn tortillas, warmed


  • 1 medium tomato, chopped

AIR-FRYER FISH TACOS


The holiday season is behind us. The kids are back to school and parents are back to work. Meals need to be prepared with time to spare. It's time to put that air-fryer to work. Try this recipe for the best fish tacos ever.

DIRECTIONS


  1. Toss cabbage, cilantro, scallion, 2 tablespoons lime juice, and avocado oil together in a medium bowl; set aside.
  2. Cut avocado in half lengthwise; scoop the pulp into the bowl of a mini food processor.
  3. Add sour cream, garlic, salt, and the remaining 3 tablespoons of lime juice; process until smooth, about 30 seconds. (Alternatively, mash with a fork to reach desired consistency.) Set aside.
  4. Preheat the air fryer to 400°F.
  5. Place egg white in a shallow dish; whisk until frothy.
  6. Combine breadcrumbs and chili powder in a separate shallow dish.
  7. Pat the fish dry with a paper towel. Coat the fish with egg white, letting excess drip off; dredge in the breadcrumb mixture, pressing to adhere.
  8. Arrange the fish in an even layer in the fryer basket; coat the fish well with cooking spray. Cook until crispy and golden on one side, about 3 minutes. Flip the fish; coat with cooking spray and cook until it's crispy and flakes easily, about 3 minutes.
  9. Flake the fish into bite-size pieces. Top each tortilla evenly with fish, avocado crema (about 1 tablespoon each), cabbage slaw (about 1/4 cup each) and tomato. Serve with lime wedges, if desired.

THE DIFFICULT CONVERSATIONS


One of the hardest things to explain to my kids is why I just won't give them everything they want, as they watch friends, family and classmates get new phones, smart watches, switches, iPad, ps5, and virtual reality gear.


No one is over 8, and many of them are not so well-behaved or do well in school.


With the most pitiful genuine heartbroken looks on their faces they say,


"Why do we have to earn our stuff Mawma. it's not fair. We work so hard and we don't get half the stuff they got."


NO BABY, IT'S NOT FAIR.


But there are children who are just like you. They work hard, are very well-behaved, they are homeless, and have nothing, is that fair?


I'm proud of you for working so hard and earning all the good things you do have.


Try not to focus on what others have.


There is no easy answer as to why not-so-nice people seem to have it all.


The beginning of difficult conversations...🥰❤️
