Bibimbap
Serves 4

125g long-grain rice
1 tbsp toasted sesame oil
150g carrots, cut into matchsticks
200g beansprouts
200g young-leaf spinach
250g ground beef
1 tbsp soy sauce
1 tbsp rice vinegar
4 eggs
2 tbsp chili sauce

Heat half the sesame oil in a large wok or frying pan over a medium-high heat. Add the carrots and mushrooms and stir-fry for 3-4 minutes. Stir-fry the courgette and beansprouts for 3-4 minutes. Stir in the spinach to wilt, then season to taste. Cook the ground beef. Stir in the soy sauce, vinegar and cooked veg. Fry eggs with slightly runny yolk. Top the bowl of rice with the veg, beef, egg and a drizzle of chili sauce.

Smoky Tomato Soup
Serves 4

1 onion, finely diced
2 garlic cloves, crushed
2 tbsp tomato purée
2 tsp smoked paprika
¼ tsp cayenne pepper
2x 400g tins chopped tomatoes
250ml vegetable stock
1 tsp runny honey

Mist a large pan with cooking spray and place on a medium heat. Add the onion and garlic and cook together for 5-6 minutes until softened. Add the tomato purée, smoked paprika and cayenne pepper. Cook until the purée has darkened slightly. Add the chopped tomatoes, vegetable stock and honey, and stir well to combine. Lower the heat and cook until slightly thickened. Blitz the soup with a food processor.

The Spanish flu began to appear in San Francisco during the fall of 1918. The first documented case was in late September; by mid-October, the city had more than 2,000 cases. The city's Board of Health enacted various measures to try to curb the disease, such as banning gatherings, closing schools and theaters, and warning citizens to avoid crowds.

More than 45,000 people were infected and around 3,000 died in San Francisco's Spanish Flu outbreak in 1918-19. San Francisco suffered a second peak of Spanish Flu cases and deaths after ending social distancing too soon, just a month after it was introduced.
