Coconut Curry Raw Soup Serves: 1
Recipe:
1 young Thai coconut (the meat and water of, about a cup of meat and 1 1/2 cups of water)
2 carrots, cut up in medium size chinks
1 clove garlic
1/2 tsp fresh ginger
1 tsp curry
1/4 tsp chili powder
Several Cremini mushrooms, sliced
1 red bell pepper, sliced
1 small handful cilantro

Fill a medium size bowl with the sliced vegetables (bell pepper, mushrooms and some cilantro).

Blend the rest of the ingredients in the Vitamix or high-speed blender. If you want warm soup blend for 3 minutes, otherwise blend until creamy, pour over vegetables and chill in the fridge or serve room temperature. Garnish with cilantro and sliced mushrooms.
