He helps us develop safer processes and avoid problems by recognizing potential issues before they happen, & he is part of the team that spends all day everyday looking for ways to improve our patient care.

Pesto Chicken Wrap

recipe makes 4 wraps

I thought you might like something simple that you don't have to turn on the oven for & you can do this with a grocery store chicken or even canned chicken.

• 3 cups baby spinach, divided
• 2 cups fresh basil
• ⅓ cup pine nuts or unsalted pistachios, toasted
• ¼ cup extra-virgin olive oil
• ¼ teaspoon salt
• 1 teaspoon lemon zest
• 2 cups  chopped or pulled cooked chicken
• 4 (8-inch) whole-wheat tortillas
•  1 avocado, diced

1. Combine 1 cup spinach, 2 cups basil and the toasted nuts in a food processor. Pulse until roughly chopped, about 10 pulses. Add ¼ cup oil and ¼ teaspoon salt; process, scraping down the sides as needed, until well combined, about 30 seconds. Stir in 1 teaspoon lemon zest.
2. Place 2 cups chicken in a large bowl. Add 3 tablespoons of the pesto and toss until evenly coated. Reserve the remaining pesto for another use.
3. Place 1 tortilla on a cutting board. Arrange ½ cup spinach down the center. Top with about ½ cup of the chicken mixture and one-quarter of the diced avocado. Roll up like a burrito and cut in half, if desired. Repeat with the remaining tortillas, spinach, chicken mixture and avocado.
