Recipe of the Week
Our colleague Amy Boccadoro (who also works at Phillips Farm) highly recommended this Spring Asparagus Galette from The Smitten Kitchen. With just-picked asparagus, grated cheese, and a flaky crust, how can you go wrong?!

Cabbage Throw Farm
Cabbage Throw Farm will be bringing the first of their spring carrots and red beets to the market this weekend as well as a bumper crop of baby greens. They will be running their 3 for $10 special on all bagged baby salad greens, which includes farmers’ mix, baby kale, butterchard, spring mix, spinach, and arugula. Don’t hesitate to ask Farmer Emily to share her favorite dressings for their different greens mixes. Also available are radish, turnip, scallions, kale, chard, tatsoi, bok choy, parsley, cilantro, gem romaine, microgreens and red dandelion greens. 
Phillips Farm
Rhubarb is making its debut at Phillips Farms this weekend. A simple recipe of stewed rhubarb (chop up rhubarb and simmer it over medium heat with some sugar and a little water until soft) and serve over yogurt or vanilla ice cream will get you inspired for more creative rhubarb recipes like rhubarb pie, rhubarb crisp and even rhubarb tea. This week Phillips Farms will also have Greenhouse Tomatoes, Asparagus, Spinach, Bok Choy, Kale, Lettuce, Arugula, Broccoli Rabe, Swiss Chard, Radishes, Scallions, Leeks, Fresh Herbs, and more. And don’t forget the potted flowers, herbs and hanging baskets!
Salvaterra's Gardens
New this week at Salvaterra's Gardens are pak choy, dill, french breakfast radishes and big, beautiful heads of spring time romaine lettuce! We're talking half the size of a young child big - lol!

Matt & Jess will also have head lettuce (red and green leaf), lettuce mix, arugula, spinach, baby kale, baby chard, kale (tuscan, green, red), collards, swiss chard, pea shoots, microgreens, scallions, and beautiful red radishes
Scholl Orchards
Asparagus and rhubarb are still the top dogs this week at Scholl Orchards. Try pairing your asparagus with some farm fresh eggs from Apple Ridge or Breakaway Farms, and a buttery slice of your favorite farmers' market bread!
Primordia Mushroom Farm
This is the last week for ramps folks, but look for lots of beautiful cultivated mushrooms varieties this week. And you're into morels you can pre-order them here (foraged on the West Coast). 

Jesse and Matt also wanted to share the progress they've made on their solar installation. About 190 panels ready to go throughout the farm! Primordia Mushroom Farm is excited to get their carbon footprint waaaay down!

Raspberry Ridge Sheep Creamery
Rob is showcasing sheep cheese curds this week. (Psst...Your market manager got a taste last week - and they're delicious!) Cheese curds are a great snack on the go (perfect for kids), and just right for tossing into a quick salad. You'll also find more camembert, truffle chevre and feta. And of course sheep yogurt, the original Greek yogurt. Come by for all your sheep dairy needs!
Haven Farmstead Table
Haven's farmers' market mix this week includes Alpine and Farmhouse - both are jammin’ with flavor at 6-months. And the fresh Feta is buttery yellow now that the cows are hitting the pasture. Philly Fromage is dosed with Porcinis and Truffle Oil. Pair these delightful cheeses with some fresh greens from your favorite farmers, and a loaf of crusty bread and you're ready to roll.

Guess what's coming to Tombler's this weekend... Rhubarb, rhubarb and more rhubarb. All organic and freshly-picked from Karen's garden, and baked into a wonderfully flaky pie crust! Choose regular rhubarb crumb, cherry rhubarb crumb (my favorite), strawberry rhubarb crumb and lattice, rhubarb custard too! Rhubard custard is a PA Dutch tradition but not always easy to find. Tomblers will also have standard favorites...apple, cherry and blueberry pie. And of course their famous pasties and pierogi!

Apple Ridge's featured bread of the week is their famous Epi. This sesame seed covered sourdough pull-apart bread is SO ADDICTING! We dare ya to resist eating the whole thing in one sitting. ;-)
