Did you know that every Bartlett pear tree produces large and small fruit? The large pears are sold fresh while smaller pears head to nearby canneries to be ripened, then cored, peeled and poached right in the BPA-free cans. Nothing is added except the poaching liquid—pear juice or a lightly sweetened syrup.
