We’re looking forward to the almond harvest just a few weeks out, but the real reason we’d like to highlight this fruit is to bid longtime vendor Beber Almondmilk farewell. We're sad to report that the business is closing their doors for good and ending their long run at the Downtown Berkeley Farmers’ Market tomorrow, Saturday, August 10th. We thank Beber for setting the standard for almondmilk production by maintaining its commitment to sourcing from certified organic California orchards. Join us in wishing them well tomorrow as you pick up your favorite quart.

The only comparable alternative to Beber might be to make your own almondmilk at home, with organic almonds from vendors like Massa Organics and Kashiwase Farm. Check out the recipe below if you’re up for the challenge!

Ingredients

  • 1 cup raw organic almonds
  • 2 cups water, plus more for soaking
  • Local honey or sweetener of choice, to taste (optional)

Equipment

  • bowl
  • blender or food processor
  • strainer
  • measuring cup
  • cheesecloth

Homemade Almondmilk

Makes 2 cups.

Instructions

  1. Place the almonds in a bowl and cover with about an inch of water. Let stand on the counter, covered with a cloth, overnight, or refrigerate for up to 2 days. The longer the almonds soak, the creamier the almond milk.
  2. Use a strainer to drain and rinse the almonds — they should feel squishy. Discard the water.
  3. Combine the water and almonds in a blender and blend for 2 minutes continuously.
  4. Strain the almonds using a cheesecloth and squeeze out as much milk as possible.
  5. Sweeten to taste.
  6. Store the almondmilk for up to 3 days in the fridge.
