Of the dozen or so melons in the Riverdog and Full Belly Farm lineup, the bright and beautiful yellow Canaries are often the first to reel folks in. This staff and crowd favorite is more than just a pretty face. On the inside, Canaries are super creamy and super sweet, with a subtle tang that gives them a bit more complexity than a honeydew. When choosing one, the brighter and heavier, the better! It never hurts to ask a vendor to help you pick one, either.

Ingredients

  • 2 Tablespoons olive oil
  • 1 Tablespoon champagne or white wine vinegar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground coriander
  • 1/2 of a large melon or a whole small melon, rind and flesh removed, cut into 1 inch pieces
  • 1 large cucumber, sliced on a diagonal 1/2 thick
  • 2 sweet peppers, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint

Herby Melon & Cucumber Salad

Adapted from the Full Belly Farm kitchen

Instructions

  1. Whisk the oil, vinegar, salt, pepper and coriander in a large bowl.
  2. Add melon, cucumber, and sweet peppers. Toss and let sit for 15 minutes.
  3. Add the herbs to the salad and toss gently.
  4. Top with some spicy chile powder or chile flakes.
