Cherries, the first of the spring stone fruit, are readily available at all three of the Berkeley Farmers’ Markets. Find varieties like Brooks, Royal Tioga, Bing, and Chelan from Kashiwase Farm, Smit Ranch, and Frog Hollow Farm. The season is short, so enjoy it while it lasts!
Easy Eating: Cherries often don't stick around a household for long, but for those with excellent self-control and patience for pitting them, there are some rewarding and delicious recipes. For desserts, try this Cherry Empanadilla, a Latin American treat, or a roasted Cherry Ice Cream. On the savory side, pair this Roasted Cherry Mole with chicken or duck, or try a Black Rice Salad with Cherries and Plums.

- 1 pound cherries
- ½ cup fresh basil thinly sliced
- ¼ cup granulated sugar white or brown
Vanilla Ricotta Toast
- ½ cup ricotta
- 1 teaspoon vanilla
- 4 slices whole grain bread

Black Cherry Basil Ricotta Toast
Adapted from Kristina Todini's Fork in the Road. Serves 2.
|
- Cut cherries in half, remove seeds, and place in large jar or medium bowl. Add sugar and basil to bowl of cherries and toss to coat.
- Cover and let the cherries marinate in the sugar and basil in the refrigerator for a minimum of 2 hours, but for best taste allow cherries to marinate overnight as cherries will release their juices.
- In food processor or small bowl, stir or whip together vanilla and ricotta cheese.
- Toast bread, if desired, and smear ricotta on toast. Top with marinated cherries and sprinkle of basil.

Spring Clean with the Resourceful app |
The days are getting longer, and it's finally light when we get home from work. The downside? We can see just how much stuff has accumulated over the winter.
The Ecology Center can help you Spring Clean with Resourceful, our new app designed to help everyone sort their recyclables, compostables, and waste into their proper place. A simple click on Resourceful App and you'll sort like an expert. You'll save enough time with the Resourceful app that you'll still be able to stroll over to the farmers' market.
