In light of fall feeling more like a second summer thus far, we're featuring a squash that’s usually lumped into the winter squash category, but is actually more closely related to summer squash varieties like Patty Pan: the Delicata! Pinstriped from end to end, the Delicata is awfully dapper yet remarkably low maintenance. Their skin is thin and edible, so no peeling's needed and they’re easy to slice. They also don’t need much seasoning to be delicious. Give it a nice roast and its natural sugars will caramelize to perfection. 


You have all season long to enjoy Delicata squash at farms like Oya Organics, Riverdog Farm, Happy Boy Farm, and Full Belly Farm.

Ingredients

  • 2 delicata squash
  • 2 Tbsp. sunflower or extra-virgin olive oil, divided
  • 1/4 c. pure maple syrup
  • 2 bunches dandelion greens or kale  
  • 5 c. canned hominy
  • 4 c. black beans (soaked and cooked, or canned, drained, and rinsed) 
  • Kosher salt
  • Garlic powder
  • 2 green onions, thinly sliced 
  • 1 c. toasted sunflower seeds

Instructions

  1. Preheat oven to 400°. Cut squash in half, clean out seeds, and cut into 1/2” rings. Place on a sheet pan, toss with 1 tablespoon oil, and bake for 25 to 30 minutes, or until tender. Toss with maple syrup and set aside.
  2. De-stem and thinly slice dandelion greens or kale. In a large skillet over medium heat, heat remaining oil. Add greens and cook until wilted, 5 to 8 minutes.
  3. Add roasted squash, hominy, and beans to skillet with greens and stir to combine. Season to taste with salt and garlic powder, and cook until all ingredients are warmed through, 3 to 5 minutes.
  4. Serve mixture into serving bowls and top with green onions and sunflower seeds.

Meet Kay Lee Farms, a Market Match vendor

Get to know Kay Lee Farms, a 70 acre farm in Fresno, through an interview with Ecology Center employee Lucy Asako-Boltz. While Kay Lee Farms isn't a Berkeley Farmers' Market vendor, Paul sells at Bay Area farmers' markets and accepts Market Match, a program of the Ecology Center that offers CalFresh/SNAP shoppers extra money to spend on fresh fruits and vegetables at farm-direct sites across California. Halloween falls on a Thursday this year, meaning you can start your festivities off at the farmers' market! We'll have scary-good tunes, face painting, trick or treating, and pumpkin decorating. BAHIA educator Laura Gonzalez will also come out to help us prepare for Día de Los Muertos with a paper maché flower workshop. Together we'll decorate a community altár in honor of our loved ones who have passed.
