The tops of fava plants are in fact both edible and delicious. The leaves you’ll find bunched at Oya Organics are harvested when young and tender, giving them a soft, buttery taste.
Easy Eating: Fava greens are great raw, like in this Fava Greens & Orange Salad or sauteed with lemon juice and good olive oil. Fava Greens with Chicken, Pecans, and Kumquats is an easy weekday recipe, especially if you stop by Roadside Rotisserie on a Tuesday or Thursday.

A note about the weather: It's been a rough couple months for the small and medium-sized farms that make up the backbone of farmers’ markets throughout the state. Yet, we've had vendors like Lifefood Gardens who are so determined to make it to market that they've torched the snow blocking their driveways.
