Happy Autumnal Equinox! The few weeks where summer and fall meet is arguably the best time of year for produce. Ginger represents this transition well. It can lend its zing to a summer stir fry just as well as it can add a comforting flavor to a warm dessert.


At the one and only Lou Vue Farm, you’ll find the whole plant from root to stalk. The root itself at Lou Vue is fresher than anything you’ll find at the grocery store, not to mention slices like butter. Find Lou Vue at the South Berkeley market every Tuesday. 


Easy Eating: Don’t use ginger gingerly! Morning is the best time for a hot cup of Ginger Tea (toss the leaves and stalks in for more flavor) and a Butternut Squash Coconut Ginger Muffin. On the savory side, whip up a Carrot Ginger Dressing for your next salad. Soy Ginger Salmon and Ginger-Scallion Hokkien Noodles are excellent options. 





Curried Ginger Carrot Soup

Ingredients

  • 3 tbsp olive oil
  • 2 tsp curry powder
  • 1 tsp fresh grated ginger
  • 1 serrano chile, deseeded and minced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 ribs celery, diced
  • 2 large potatoes cut into 1-inch chunks
  • 8 carrots cut into 1-inch chunks
  • Vegetable stock to cover
  • 1 tbsp lime juice
  • 2 tsp salt
  • Black pepper to taste
  • Cilantro, chopped for garnish
  • Scallions, chopped for garnish


Instructions

  1. In a large stock pot, heat oil and add curry powder and stir constantly until aromatic, making sure it doesn’t burn. Add onion, garlic, ginger, and celery, and cook for 5-8 minutes until soft. Add potatoes, carrots, and stock and bring to a boil. Once boiling, lower the heat, cover, and cook for another 15-20 minutes or until potatoes and carrots are tender.
  2. In small batches, carefully puree the soup in a blender until smooth. Alternately, you can use an immersion/hand blender and blend the soup right in the pot. Season with salt, pepper, and lime juice. Top with cilantro and scallion, garnish, and enjoy!

Jack Johnson Wants to Match Your Donation!


If anyone can put us into a better state of mind, it's Jack Johnson with his plucky, laidback music. He also wants us to keep in mind that equitable and sustainable food systems and plastic-free solutions are paramount.


That's why once again this year Jack Johnson and his Ohana Foundation have put up a matching fund for the Ecology Center. They will match dollar-for-dollar up to $2,500 each donation that we receive from you now through October 15.
