A trip to the South Berkeley Farmers’ Market in winter means a chance to score a sweet, Gold Rush apple from the even sweeter folks at Billy Bob Orchards. 


Named after their aurous color and rush of flavor at first bite, these late season apples are well worth the wait. While mushy might come to mind when reaching for yellow apples, these gems are firm, crisp, and honey-sweet with tangy citrus notes, making them ideal for baking, juicing, or just plain snacking. The darker, the sweeter.


Bill Peixoto grows Gold Rush and over 10 other varieties on 15 acres in Watsonville with his wife Karen and son Zac. They’ve been farming for 40 years, certified organic for 25, and a vendor at our markets for nearly 20. Snatch up the last of the season this coming Tuesday. Cabbage Salad with Apples & Walnuts

Ingredients

  • 1 small cabbage
  • 1/3 cup walnuts
  • 2 apples
  • 2 tbsp cider vinegar
  • 1 tbsp lemon juice
  • Salt and pepper
  • 1/2 cup olive oil
  • 2 tbsp creme fraiche or heavy cream


Instructions


  1. Tear off and discard the tough outer leaves of the cabbage. Cut the cabbage in half and cut out its core. Slice the halves crosswire into very thin, narrow strips.
  2. Toast the walnuts in a pan until golden. Chop when cooled.
  3. To prepare the dressing, mix the vinegar with the lemon juice, some salt, and a generous amount of pepper. Whisk in the olive oil and then the creme fraiche or cream. Taste and adjust the acid and salt as desired.
  4. Quarter and core the apples. Slice the quarters lengthwise, fairly thin, and cut these slices lengthwise to make a julienne slice. Toss the cabbage, apples, and walnuts with the dressing and an extra pinch of salt. Let the salad sit for 5 minutes. Taste again, adjust the seasoning as needed, and serve.
