Nothing says spring like green garlic! For those of us who hate mincing garlic cloves, it’s a wonderful time of year. This early spring crop isn’t a garlic varietal – it’s simply garlic that’s been harvested early. They are easy to confuse with green onions, so be sure to look for thicker stems and pink hues along the bulbs to distinguish them or, better yet, ask your farmer! Green garlic is on the milder side, so use it as you would a scallion. Use it generously if replacing mature, cured garlic in a recipe.

Green Garlic Toast

A Full Belly Farm favorite

Ingredients

  • 4 slices of crusty bread
  • 1/2 cup unsalted butter, softened
  • 1/2 cup grated parmesan
  • 2 1/2 tablespoons chopped young green garlic, white and green parts
  • 1 tbsp minced chives (optional)
  • 1/4 tsp black pepper
  • 1/4 tsp fine sea salt, more to taste
  • large pinch red chile flakes
  • 1 regular garlic clove, halved

Instructions

  1. Place the slices of bread on a baking sheet and broil them, flipping them halfway through the cooking, so that they are golden brown on both sides. Keep them warm. 
  2. In a bowl, stir together the butter, cheese, green garlic, chives, pepper, salt and chile. 
  3. Spread each slice with the green garlic butter. Broil the toast again for 30 seconds to 2 minutes, until the tops are lightly brown and the butter melts. Serve hot or warm.
