Thanks to Blossom Bluff Orchard, Kaki Farm, and Kashiwase Farm, the market are adorned with orange Hachiya persimmons as bright as holiday lights. Enjoying a Hachiya's honey-sweetness and warm notes of cinnamon requires patience. Leave them on your counter until they are soft, translucent, and jelly-like (when unripe, they are unpleasantly astringent). Or take the road less traveled and make hoshigaki, or Japanese air-dried Hachiyas often referred to as the “kobe beef of dried fruit." It's a slow, rewarding winter project fit for the foodie in your life. Kits like the one pictured above are available for sale at Blossom Bluff Orchard, and they're one of many unique gifts you'll find at the Berkeley Farmers' Markets until our last market on Saturday, December 23rd.

Easy Eating: Enjoy fresh persimmon pulp over yogurt and granola or, better yet, get baking! Persimmon Cookies, in addition to the cake below, are a great option for the holiday dessert table.

Perimmon Cake with Citrus Glaze

Ingredients

Cake

  • 1 1/4 cups Hachiya persimmon pulp
  • 2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/2 cup softened butter
  • 2 eggs
  • 1 cup sugar
  • 2 Tbsp orange juice
  • 1 Tbsp brandy or cognac

Icing

  • 1 cup confectioners' sugar
  • 2 tsp lemon juice
  • 2 tsp orange juice

Instructions

  1. Preheat your oven to 350 degrees.
  2. Remove skin from persimmons and seed the fruit. Blend the pulp in a food processor or blender and set aside.
  3. Mix all dry cake ingredients in a large bowl and set aside.
  4. Blend the sugar into the butter until creamy. Add the eggs, orange juice and cognac to the butter mixture and beat until fully incorporated.
  5. Blend in the persimmon puree.
  6. Add the flour mixture to the butter and persimmon mixture and mix until barely incorporated.
  7. Grease a 9x13 pan and then spread the batter inside.
  8. Bake for 20 - 25 minutes, or until a toothpick comes out clean.
  9. To make the icing, mix the powdered sugar, orange juice and lemon juice in a bowl until you have a thick syrupy consistency. Add more juice or sugar to get your desired consistency.
  10. When the cake is cooled, ice and enjoy!

Bring Reuse to Oakland!

On Tuesday, December 19, Oakland City Council is considering an ordinance that will require reusables for restaurant dine-in and larger venues like concerts, and allow take-out customers to opt into receiving items like plastic utensils and straws. If passed, this policy will promote reuse and help consumers avoid plastic foodware- keeping our streets clean and reducing our reliance on petrochemicals!
