Thanksgiving is less than a week away, and it’s time to start thinking about what’ll end up on the dinner table. Buttery green beans are a staple for many but easily become an afterthought when you're juggling other dishes. Let Haricots verts, or French green beans, do the work for you. Haricots are slimmer and daintier than the standard green bean, and in turn more tender and flavorful, with a shorter cook time. You'll whip up a delicious side in no time.


Find Haricot Verts at Dirty Girl Produce and Lucero Organics on both Saturday and Tuesday.


Easy Eating: If you're craving a classic side, make Garlicky Haricots Verts with Hazelnuts. If you want to make something a little different, try them Raw and Smashed, Air-Fried with a Tempura-esque Dipping Sauce, or very cutely Bundled with Brie. Happy Eating!

Ingredients

  • 2 cups canned white beans
  • 2 pounds haricots verts, trimmed
  • 2 large shallots, minced
  • 2 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons sherry vinegar
  • 2 tablespoons red wine vinegar
  • 1/2 cup extra virgin olive oil
  • Freshly ground pepper
  • 1/4 cup chopped parsley

Haricots Verts with White Beans & Dijon Vinaigrette

Adapted from Food + Wine magazine

Instructions

  1. In a large pot of salted boiling water, cook the haricots verts until crisp-tender, about 3 minutes. Meanwhile, drain the canned beans.
  2. In a small bowl, combine the shallots, garlic, mustard and both vinegars. Add a pinch of salt and let the vinaigrette stand for 10 minutes. Whisk in the olive oil and season with salt and pepper.
  3. Transfer the beans to a large bowl and add the haricots verts. Add the vinaigrette and toss well. Season with salt and pepper and transfer to a platter. Sprinkle with the parsley and serve.
