It’s that time of the year where many of us gather to enjoy the excitement (and mayhem) the holidays bring. As such, it’s also the time of year for pesky colds and flus. Here in California, nature seems to provide us with an abundance of winter fruits packed with vitamin C to help us combat the season of sickness. Kiwifruit are among the most immune-boosting, with even more vitamin C than oranges!


We at the Ecology Center especially love kiwi for its very cute and fuzzy sustainable packaging. Their sweet notes of melon and berry also help tide us over until next summer.


Select a kiwifruit as you would a peach. The sweetest ones are plump, soft to the touch, and fragrant. Find them at Brokaw Ranch, Smit Farm, Blossom Bluff Orchards, and Four Sisters Farm right now.

Kiwi, Persimmon, & Walnut Salad

A bright winter side. Serves 4.

Ingredients

  • 2 heads little gem lettuce, chopped
  • 1 Fuyu persimmon, thinly sliced
  • 2 kiwi, peeled and sliced
  • 1/2 cups walnuts
  • 1/4 fennel bulb, sliced thinly
  • 1/2 cup pomegranate seeds

Dressing

  • 3 tablespoons olive oil
  • 1.5 tablespoons balsamic vinegar
  • salt and pepper to taste

Instructions

  1. To make the dressing, whisk the olive oil, vinegar, salt and pepper to combine.
  2. In a large bowl, layer the remaining ingredients, coat with dressing, and toss.
