This week, we’re dancing for rain – and mushrooms! The word maitake actually means “dancing mushroom” in Japanese because its medicinal properties are such that foragers were rumored to dance with joy when they found one. Chances are you’ll want to get down after tasting one, too. These bouquets of thin, feathery mushrooms have a rich, umami taste and crisp up superbly in a pan.
Find maitake at any Berkeley Farmers' Market. Look for Solano Mushrooms on Tuesdays and Saturdays and E&H Farms every Thursday.
Zero Waste: To keep your mushrooms slime-free for up to ten days, wrap them in a paper towel and place them in a paper bag.
Easy Eating: Don't know where to start with maitake? Slice them into strips and add them to your morning egg or tofu scramble. For dinner, make Soba and Maitake in Soy Broth or a Maitake Wild Rice Salad. You can toss any mushroom into this Creamy Pasta with Crispy Mushrooms, but in our opinion, maitake work best.

Ingredients
- 1 tbsp grated fresh ginger
- 1/4 c soy sauce
- 1/4 c rice vinegar
- 1/2 cup canola oil
- 4 whole maitake mushrooms
- Sea salt and ground white pepper
- 2 scallions, thinly sliced
- 1 tbsp sesame seeds

Serves 4.
Instructions
- In a bowl, combine the ginger, soy sauce, vinegar, and oil.
- Arrange the mushrooms in a baking dish, add 1/4 cup of water, and season the mushrooms with salt and pepper.
- Cover the dish with foil, transfer to the oven, and roast for 15 minutes. Remove the foil and roast until the mushrooms have taken on a little color, another 3 to 5 minutes.
- Remove the mushrooms from the oven. Gently dress the mushrooms with the vinaigrette, garnish with the scallions and sesame seeds.

Support the Berkeley Food Network Holiday Drive
Beginning December 1st, the Berkeley Farmers' Markets will be collecting cash and card donations for the annual Berkeley Food Network Holiday Drive at our information booth.
Your generosity will enable the food bank to purchase fresh produce from our farmers and distribute it to those who need it.
