Even though we’re lucky enough to have citrus year-round here in the Bay Area, lemons evoke visions of a bright springtime. Smooth, gold-skinned Meyers are a favorite. These lemons are technically a lemon-mandarin hybrid, and it shows. They have 4 times more sugar than a Eureka lemon, and a perfume that feels both fruity and floral. They’re virtually pithless, making the rind great for zesting and the peels perfect for preserving. Find Meyer lemons right now at Kaki Farm and Brokaw Nursery. Meyer Lemon Curd

When life gives you lemon curd, put a dallop on toast, pancakes, english muffins, and more...

Instructions

  1. Fill the bottom pot of your double boiler with 1–2 inches of water. Place on high heat. Once the water begins to boil, reduce to low heat to keep the water at a simmer.
  2. Place egg yolks, granulated sugar, lemon zest, lemon juice, and salt into the top pot of your double boiler. Using a silicone whisk, whisk until completely blended, then continue to whisk as the curd cooks. Constant whisking prevents the egg yolks from curdling. Whisk and cook until the mixture becomes thick, resembling the texture of hollandaise sauce, about 10 minutes.
  3. Remove pan from heat. Whisk the butter into the curd. It should melt as you whisk.
  4. Pour curd into a jar or bowl. Refrigerate once cool, for up to 10 days.

  • 4 large egg yolks
  • 2/3 cup granulated sugar
  • 1 tbsp Meyer lemon zest
  • 1/3 c Meyer lemon juice
  • 1/8 tsp salt
  • 6 tbsp unsalted butter, sliced & at room temp

Environmental Justice Poetry Tour
