This week, we’ve managed to peel our eyes away from stone fruit long enough to notice the beautiful stacks of fresh moringa. In the West, moringa is hailed as a superfood and usually found in powdered form. Just 100 grams of their cute, round leaves has more protein than a cup of milk and more iron than a cup of spinach. In southeast Asian countries, moringa is a staple food used for "anything and everything!" as stated by Michael Thao of Lou Vue Farm.
Find moringa at Lou Vue on Tuesdays and Vang Family Farm on Saturdays.
Easy Eating: Sub moringa in wherever you would typically use spinach. Try it in a smoothie, or any stir fry. You can also enjoy it more traditionally in a Sri Lankan Potato Salad with Moringa Leaves or Indian-inspired Moringa Leaf Dal.

1 teaspoon coconut oil
- ½ cup tender moringa (drumstick leaves) tightly packed
- 3 green chillies
- ½ cup shredded coconut
- 1 teaspoon ginger (optional)

1 small piece of tamarind Or 1 teaspoon of lime juice

salt adjust to taste

Moringa Leaf Chutney

- Add one teaspoon of oil to a pan, add the green chilies and moringa leaves and saute for a minute until the leaves wilt. Be careful to not overcook. Set aside when done.
- In a blender, take shredded coconut, roasted green chilies-moringa leaves mixture, tamarind, ginger, salt, and blend into a smooth paste by adding ½ cup of water.
- Transfer in the serving bowl. Serve with dosa, idli, or chapati.
