The Spring Fruit Season is off to an a-May-zing start. Cherries and blueberries abound this week but we’ve had a keen eye on Frog Hollow Farm’s mulberries. Mulberries are hard to find anywhere but the farmer’s market, and Frog Hollow is one of the few growers in the state. So we’re happy when they are here!

The Pakistan variety of mulberries that Frog Hollow grows in Brentwood look like longer, daintier blackberries. They are a deep purple with red hues that thankfully don’t signal acidity and are instead super sweet. Frog Hollow is at all three Berkeley Farmer’s Markets right now with these freshly-picked delicacies.

Easy Eating: Savor them when fresh! All alone, over yogurt or why not even subbed for jam in a pb&j? This Mizuna, Fennel, and Mulberry Salad is a tasty, light lunch. To enjoy mulberries year round, make Dark Cherry and Mulberry Jam. To devour right now, make a Mulberry Sorbet. Since things always taste better when someone else makes, do yourself a favor and nab a Mulberry Tartlet at Frog Hollow Farm.
Mulberry Muffins
A breakfast or snack full of jammy goodness
Ingredients
  • 2 cups flour (plus more for dusting)
  • ½ teaspoon sea salt
  • 2 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter (or vegetable/coconut oil)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk (or alternative milk)
  • 1 cup fresh mulberries

Instructions
  1. Preheat the oven to 350°F. Flour a muffin pan to prevent sticking and set aside.
  2. Add flour, salt, baking powder, and cinnamon to a medium-sized bowl. Whisk to combine, then set aside.
  3. Using a mixer, cream butter on medium until fluffy for about one minute. Add sugar and beat for another minute. Crack eggs, into the mixture, while mixing vanilla.
  4. Add the flour mixture to the mixer, in batches, alternating with the milk. Mix just until all the ingredients are incorporated, scraping the sides of the bowl when necessary.
  5. Toss mulberries in a tiny bit of flour to keep them from sinking to the bottom of the muffins, then fold them into the batter. Divide the batter between prepared muffin cups.
  6. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool muffins for 10 to 15 minutes before removing them from the muffin pan.
