Tiny flying-saucers have descended into the farmers’ market, signaling the arrival of summer! The Patty Pan variety of summer squash has everything going for it: it’s got a fun, scalloped shape; it’s affordable; and its quick cook time makes it easy to incorporate into a weekday meal. We think it’s out of this world.

You can find Patty Pans at all three markets. Just head to Riverdog Farm and Lucero Organics.

Easy Eating: Roast it simply, stuff it with wild rice and veggies, or eat it over noodles with the recipe below. If June Gloom is delaying your urge to reach for summer squash right now, hang onto this Patty Pan Squash Panzanella recipe for when there is enough sun to ripen this season's tomatoes.

Ingredients

  • 1/2 cup creamy peanut butter
  • 3/4 cups hot water
  • 2 tbsp gochujang paste
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1/2 tsp garlic powder
  • 1-3 tsp sriracha or hot chili oil
  • 1 tsp miso (optional)
  • 10 oz noodles
  • 2-3 patty pan squash, sliced into matchsticks
  • gochugaru (Korean chile powder) or hot sauce to serve

Gochujang Peanut Noodles with Slivered Patty Pan Squash

Instructions

  1. Make the gochujang peanut sauce: Whisk together all the sauce ingredients until smooth. Thin with additional water as needed.
  2. Cook the noodles according to package directions.
  3. Toss the noodles in the sauce along with the patty pan squash, setting some aside to top for garnish.
  4. Serve with chile powder, hot sauce, or hot chile oil. Enjoy warm or cold.

Together We Can—Create a Healthy, Sustainable, and Just Future

Over the years, your community support allowed us to establish the nation’s first curbside recycling program, to lead on Berkeley’s Soda Tax, to help pass Berkeley’s Disposable Foodware Reduction Ordinance, to support regenerative small-scale agriculture through California farmers’ markets, and to make our voice heard at the United Nations Basel Convention that ended the export of toxic plastic waste. We leverage your financial contributions to make significant systems changes that redefine what is possible.

With your donation today, we can advance new solutions like getting the whole City of Berkeley off of methane gas, addressing inequity in climate funding, sustaining regenerative small farms, making every farmers’ market affordable for low income shoppers, ending plastic pollution, and cultivating new leadership in Berkeley’s insightful youth. When we join your financial contributions with our skilled board and staff, we achieve amazing results.
