It's finally that time of year when, with each passing day, we welcome more and more stone fruit to the market. Sunshine-orange apricots are among the first to arrive. Because the fruit on a single apricot tree ripen over just three weeks, varieties come and go quickly! The ones to savor at Frog Hollow Farm, Kashiwase Farms and Blossom Bluff Orchards right now are Poppy (large, sweet, and crisp), Kettleman (rich, gold, and on the tarter side), and Apache (delicate, blush, and smooth). Which will you ad to your shopping list this week?

Grilled Apricots with Candied Walnuts for Two

Serve with ice cream to start summer off right

  • 1/4 cup of walnuts
  • 4 apricots, halved with stones removed
  • 2 tbsp maple syrup
  • 1/2 tsp coconut oil
  • vanilla ice cream, to serve
  • extra maple syrup for drizzling
  1. Place the walnuts in a small saucepan over high heat. Cook for 2 mins or until lightly toasted. Reduce heat to low. Add the maple syrup. Cook, stirring, for 2 mins or until the maple syrup crystallizes and coats the walnuts. Remove from the heat. Transfer to a clean work surface and finely chop.
  2. Fire up your grill. Drizzle the apricots lightly with coconut oil. Cook the apricot for 2-3 minutes on each side or until they are slightly charred.
  3. Prep 2 bowls with a scoop of ice cream each. Place grilled apricots on top, and sprinkle with walnuts and more maple syrup if desired.
