And just like that, the farmers’ market is flush with all the early produce we’ve eagerly awaited! 


Sugar snap peas, strawberries, and even apricots all abound, but stealing the show for us this week is Gattoneli Farms rosy rhubarb. It made its first appearance this past Saturday, but since it’s only ripe for a month or two out of the year, it won’t be around long. This veggie has a celery-like crunch and lip-puckering astringency when fresh, which is why it’s typically baked. Heat mutes the bitterness a touch, but keeps just enough to provide a nice contrast to the sweet stone fruit and berries that share the same season, and often the same dessert.

Easy Eating: What do you do with it besides make the classic Strawberry-Rhubarb Pie? Celebrate Triple Delight’s return with an easy-peasy Blueberry Rhubarb (Bluebarb?) Crumble. It can also be used in savory dishes, like a Rhubarb and Cinnamon Red Lentil Curry or Salmon with Rhubarb Sauce.

Ingredients

  • 10 ounces rhubarb, chopped into 1/2 inch chunks
  • 2 cups water
  • 200 grams (1 cup) sugar
  • 1/2 of one vanilla bean, split open
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon fresh lemon juice

Homemade Rhubarb Syrup

Add a splash to your seltzer or cook down longer to drizzle on pancakes and waffles.

Instructions

  1. Add rhubarb, water, sugar, salt, vanilla bean, and cardamom to a sauce pot.
  2. Simmer on medium-low for 15-20 minutes, stirring occasionally, until rhubarb is completely broken down and juices have released.
  3. Remove from heat and let cool for 15 minutes then strain syrup into bowl.
  4. Stir lemon juice into rhubarb syrup then pour into a clean beverage bottle for storage.


Syrup will last in refrigerator for 3-4 weeks, or in freezer for several months.
