We love weird vegetables, and Romanesco ranks high on that list. If you’re unfamiliar, Romanesco is that striking chartreuse brassica you’ve seen at the farmers’ market with the trippy, logarithmic spirals (click here to geek out on its fractal patterns). This Italian heirloom is more closely related to cauliflower and can be used to replace cauliflower in any recipe. We like that its florets are a little smaller and more compact, often making it even easier and less messy to break down than a cauliflower.

Lemon & Parmesan Roasted Romanesco |
- 1 medium-sized Romanesco, broken down into bite-sized florets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tsp lemon zest
- salt & pepper to taste
- 1/4 c grated Parmesan cheese

- Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.
- In a bowl, drizzle florets with olive oil. Add garlic, lemon zest, salt, and pepper; and mix enough to coat the Romanesco completely.
- Place on the baking sheet and roast for 20 minutes, or until tender and browned.
- Serve warm, topped with grated Parmesan to taste.

As a program that strives to support small California farms, the looming threat of mass deportations is making us anxious to say the least. We stand in firm solidarity with immigrants, who are the backbone of all food systems and countless agricultural communities.
The Cal ACLU chapter will be joining us at the Downtown Berkeley Farmers' Market on Saturday March 8th to provide resources where community members, regardless of their status, can learn how they can protect themselves or aid as allies. You might also consider donating to ACLU if you can.
