Warrens are a pear variety that we really cherish this time of year. They’re juicy when ripe, honey-sweet, and melt right in your mouth – without a trace of that grit characteristic of Boscs and Bartletts. Fun fact: Frog Hollow Farm’s Warrens are famous! They’ve been listed on Oprah’s favorite holiday gift list and mentioned in Martha Stewart’s LIVING magazine, but we think Peach Jamboree’s are also hype-worthy. Regardless of where you shop, wait for them to turn slightly golden before taking that first bite.
Easy Eating: Slice a few Warrens up to enjoy with honey and your favorite Stepladder cheese. They’re also a great pear to bake with. Try a simple Warren Pear and Berry Crisp, a recipe from Chez Panisse. If you’re leaning toward something savory, you can’t go wrong with a Grilled Bleu Cheese and Pear Sandwich.

Roasted Warren Pear with Caramel Sauce
A recipe from Frog Hollow Farm

- 3 large, slightly ripe Warren Pear, cut in half and cored
- 3 tablespoons unsalted butter
- 3 tablespoons organic cane sugar
- 1/2 cup whipping cream
- Pinch of kosher salt
- Maldon salt for garnish
- Chopped almonds to garnish

- Heat the oven to 375° F. Halve the cored pears in a cast-iron pan, rounded side down.
- Cut the butter into bits and distribute them over the pear halves. Sprinkle them with the sugar and put the dish in the oven. Bake for 25 to 30 minutes, basting occasionally with the juices. The pears will be ready if tender when pierced in their thickest part with a sharp knife.
- Remove the pears from the dish, set the dish over high heat and cook, stirring constantly, until the mixture turns a light caramel color.
- Pour in the cream and bring to a boil, adding a pinch of salt, if you like. Cook until the sauce is smooth. It will darken and turn a rich brown after you pour in the cream.
- Serve a warm pear half to each person with some of the sauce spooned over it. Sprinkle with the nuts, and serve with flaky salt on the side, if you like.
