Phillis Carey's
Recipe of the Week Email
February 13, 2019

Valentine's Day is tomorrow and I'm sure you have everything planned but just in case I've included a few ideas to enhance your experience food-wise in this week's newsletter.

The Caramel Apple Roses (see below) are so cute and tasty too. And while they take a bit of time to create, there is nothing hard in the process. I had to make 40 of them last week for class, but you will probably only make the 6 in the recipe--so it'll be a breeze.

Have you tried Ambrosia apples? I had never heard of them until last week when I used them for this dessert. They are delicious and have the great quality of holding their shape during cooking and not turning to mush. And they don't brown as quickly as other apples do when cut. A virtually perfect apple!

Then there is the salad-- Caramelized Bacon and Fennel Salad, oh my! You roast the bacon right along with the fennel and then toss it with mixed greens and a simple lemony honey dressing. It's tart and sweet and filled with earthy smoky flavors. Maybe add a bit more bacon and call it a main course!

The Chocolate Torte you have seen before but it's just too good not to leave it here for one more newsletter. If you haven't tried it yet, this might be the week.

I had lunch today with Diane Phillips and Merlene Lynch, friends and companion tour directors for our trip to Sicily in April. We met up at The Barrel Room in Rancho Bernardo for a fun planning and catch up session. So fun!

I had the Smoked Salmon Salad (see picture below). Light and tasty but the best part were the fried capers generously sprinkled over all. Salty and Divine! I forgot to take a picture so I borrowed this one--I added avocado to my salad and no ranch dressing on the side, just a simple vinaigrette. Yummy!

Note--there are still a few spots left in my cooking classes this term. Each class listed below tells you whether it is full or how many spots are open. And please don't hesitate to put your name on the waiting list. I pull names from this list each week when I get cancellations.

Diane Phillips and I are shooting for December for our next Diva Queen event! I'll keep you posted as we get closer.

Happy Valentine's Day to you all. I hope you spend a happy one with a loved one or two or a whole bunch. Until next time, Phillis

PRETTY APPLE CARAMEL ROSES

Roasted Bacon and Fennel Salad

CARAMELIZED BACON AND FENNEL SALAD WITH HONEY LEMON VINAIGRETTE
Serves 4.
Salad:
1 bulb fennel, halved and cut into
1/2-inch wedges
5 slices thick bacon, cut across
into thin strips
2 cloves garlic, minced
2 T. brown sugar
1 T. extra-virgin olive oil
1/4 tsp. salt
1/8 tsp. freshly ground black pepper
5 oz. (about 6 to 7 cups) mixed salad greens

Vinaigrette: (Makes 1/2 cup.)
2 T. red wine vinegar
1 T. fresh lemon juice
1/2 tsp. honey
1/2 tsp. salt
1/8 tsp. freshly ground black pepper
1/4 cup extra-virgin olive oil

1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
In a medium bowl, toss together fennel, uncooked bacon, garlic, brown sugar, olive oil, salt, and pepper. Place the ingredients on the baking sheet in a single layer. Cook until the bacon is crisp and the fennel is caramelized, about 25 minutes. Remove from the oven and let cool for 5 minutes.

2. In a large bowl, place the salad greens, bacon and caramelized fennel. Toss the salad with enough of the Vinaigrette to coat well; serve immediately.

3. To make the Red Wine Vinaigrette, mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
