Ingredients
(4) Med. Boned & Skinned Chicken Breast Halves,
Cooked & Shredded (Cheat: Use Rotisserie Chicken)
(2) 28 oz. Cans Crushed Tomatoes
10 oz. Enchilada Sauce
14.5 oz. Chicken Broth
2 Cups Water
2 Tbsp. Goya Cilantro Cooking Base
4 oz. Canned Green Chile Peppers, Chopped
1 tsp. Garlic, Minced
1.5 tsp. Chili Powder
1.5 tsp. Cumin
1 Bay Leaf
1 lb. Frozen Corn
1 Large Onion, Chopped

Instructions
Place cooked, shredded chicken, tomatoes, enchilada sauce onions, green chilis, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and a bay leaf. Stir in corn and cilantro base. Cover and cook on low for 6-8 hours.
Top with shredded cheddar, sour cream, and fried tortilla strips.
