SLUSD Pet of the Month: Mac David

Our Benefits Specialist, Maria David, has a special "benefit" at home—her granddog, Mac! This adorable Frenchton (a French Bulldog and Boston Terrier mix) was born on January 12, 2023, and brings plenty of joy to the David family. Mac’s favorite activities include cuddles, car rides, and beach days, and he never turns down a banana or peanut butter treat. He’s the perfect little “benefit package” for Maria’s family!

Hearty Vegan Lentil Soup


Full of veggies and hearty lentils, this Vegan Lentil Soup is rich in protein and fiber and so much healthier than canned soup! Plus, it’s easy to make using the stovetop, Instant Pot, or Slow Cooker!


Ingredients

  • 1/4 cup water (or 2 tablespoons olive oil for sautéing)
  • 1 medium onion, diced
  • 2–3 carrots (about 1 cup), diced
  • 2 celery ribs, diced
  • 3 cloves garlic, minced
  • 1 cup green beans, cut into 1-inch pieces (fresh or frozen)
  • 1 can (14 oz.) diced tomatoes with juices (or 2–3 Roma tomatoes, diced)
  • 1 lb. baby potatoes, diced
  • 1 1/2 cups dried brown or green lentils
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon curry powder
  • 6 cups water or low-sodium broth (plus more as needed)
  • 2 handfuls baby spinach or kale
  • Juice of 1 lemon
  • 1/2 cup parsley, chopped
  • Salt & pepper, to taste


Instructions


  • In a large pot or Dutch oven, heat the water (or olive oil) over medium heat. Add the diced onion, carrots, celery, and garlic, and sauté for about 5 minutes, until softened. Add the paprika, curry, and cumin, and sauté for another minute until fragrant.


  • Add the green beans, tomatoes, diced potatoes, lentils, and the 6 cups of water or broth. Stir well and bring to a boil. Lower the heat to a simmer, cover partially, and cook for 30–35 minutes, stirring occasionally, until the lentils and potatoes are tender.


  • About 5 minutes before the soup is done, stir in the spinach or kale, adding more water if the soup is too thick. Stir in the lemon juice and season with salt and pepper to taste.


  • Ladle the soup into bowls and top with a sprinkle of fresh parsley and an extra squeeze of lemon juice for brightness.

Persimmon Spice Bread


A warm, spiced persimmon bread that’s naturally sweetened and perfect for cozy days.


Ingredients

  • 1 1/4 cups persimmon pulp, mashed
  • 1 tablespoon lemon juice
  • 2 tablespoons unsweetened applesauce
  • 1/2 cup agave nectar (or another liquid sweetener)
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 teaspoon salt
  • 1/4–1/2 cup raisins
  • 1/4–1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Lightly oil a loaf pan or bundt pan.
  2. In a small bowl, combine the persimmon pulp, lemon juice, applesauce, and agave nectar, mixing well.
  3. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, ginger, nutmeg, and salt.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until the flour is just moistened (avoid over-mixing). Fold in the raisins and walnuts, if using.
  5. Pour the batter into the prepared pan and bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean. Bundt pans may bake closer to 40 minutes.
  6. Allow the bread to cool in the pan for about 10 minutes, then remove and let it cool completely before serving.
