This holiday tradition takes a sweet twist when we combine two American favorites, New York style cheesecake and pumpkin pie. It’s the perfect way to elevate any gathering!
Panettone and Pandoro are two staples in every Italian household. The two recipes are similar but differ in the density of the dough and addition of fillings. If you ask most Italians, they will have a preference for one or the other, but all will agree it’s not the same without these sweet breads on your table!


Ferrara Petite Amaretto Baba Cakes are light, cylindrical yeast cakes baked until airy then soaked with a sugar syrup that is flavored with amaretto, an almond liqueur. A product of Italy, Ferrara Petite Amaretto Baba Cakes can be enjoyed on its own, filled with pastry cream or served on top of ice cream.

SUMPTUOUS RECIPE FOLLOWS!
CRISPY GNOCCI WITH PROSCIUTTO AND GREENS!

RECIPE
INGREDIENTS:
  • ¼ c Paolo Olive Oil
  • 3 oz Columbus Prosciutto cut into bite size pieces
  • ½ yellow onion cut in medium size pieces
  • 1 Package Paolo’s Gnocchi
  • 1 Roma Tomato cut in large pieces
  • 1-1/2 tsp Parsley Flakes
  • 3 c fresh spinach
  • 1-1/2 c baby arugula
  • Optional-cracked black pepper to taste

 
INSTRUCTIONS:
  • Heat olive oil in a large, nonstick skillet over medium-high heat
  • Add prosciutto and onion and cook until prosciutto is crisp, about 3 minutes
  • Transfer to a towel lined plate
  • Add gnocchi to skillet and cook over medium-high heat for 2 minutes
  • Add cut up tomato and sprinkle with parsley
  • Stir continuously until golden and crisp
  • Add prosciutto/onion mix and toss with spinach and arugula until greens are
  • wilted. 
 
Finish with cracked black pepper to taste. Drizzle with olive oil. Transfer to a platter and enjoy!

Bacon Wrapped Stuffed Shrimp
Ingredients:

  • 4 ounces crab meat
  • at least 4 strips of thick-cut bacon
  • 2 jumbo shrimp
  • 1 shoot of scallions
  • fresh parsley to taste
  • 1 clove fresh garlic
  • 2 oz. seasoned bread crumbs
  • 2 oz. softened cream cheese
  • 1 egg
  • 2 tablespoons lemon juice
  • Salt to taste
  • crushed red pepper flakes (optional)
  • splash of extra virgin oil


Instructions:

In a frying pan, add crab meat (remove extra moisture with paper towel), finely chopped scallions, garlic, parsley, a splash of extra virgin oil and red pepper flakes, if desired. Toast until crab meat turns a darker brown and becomes fragrant.

In a mixing bowl, manually mix cream cheese, bread crumbs, egg and lemon juice. Add cooked ingredients and mix together.

Deshell shrimp, then butterfly open along underside of shrimp. Take approximately half of the mixed ingredients and place on top of each shrimp. Wrap each shrimp with 2 strips of raw bacon.

Place on greased baking pan and bake at 350 degrees for 20-25 minutes.
