SSC Recipe of the Month
PHEASANT BREASTS WRAPPED IN PROSCIUTTO
WITH PARMESAN CHEESE
INGREDIENTS
6 pheasant breasts
6 fresh sage leaves
12 slices of prosciutto
Grated Parmesan cheese
Olive oil
Salt & pepper for seasoning
INSTRUCTIONS
Using a sharp knife, score in a lattice fashion the underside of each pheasant breast. Season each breast with salt and pepper. Finely chop the sage leaves and blend them with the Parmesan cheese. Evenly coat the pheasant breasts with the sage and Parmesan cheese mixture. Lay 2 slices of prosciutto onto each breast and drizzle with olive oil. Cover the breasts with cling film and beat with a mallet until the breasts are about ¼ inches thick. Transfer the breasts, prosciutto side down, into a non-stick frying pan on medium heat. Trickle another small amount of olive oil over the top and cook for 2-3 minutes on each side. If you prefer the prosciutto to be crispy, fry on the prosciutto side for an extra 30 seconds. We usually serve the pheasant breasts with roasted potatoes and our favorite Sauvignon Blanc.

Legislation
We are still sorting through the tremendous number of bills introduced into the state Assembly and Senate this year. It is our intent to have the results of our research out to the membership within the next week, as a separate mailing.
One bill that has attracted attention and has been referred to the Assembly Water, Parks and Wildlife Committee is AB 1038 by Assembly woman Heather Hadwick. This bill is intended to enhance public safety while preserving the wild nature of bears by requiring the Fish & Game Commission to designate specific seasons during which houndsmen may use dogs, in a non-lethal pursuit of bears. The intent being to reestablish the natural fear bears have of humans by hazing them out of human populated areas with dogs.
The bill would further provide the Commission with the discretion to establish a hunting season where dogs may be used to purse bears for harvest in areas identified as requiring management. The intent being to help bring their overabundant population back in balance with their ecosystem and prey.
The bill was co-sponsored by the California Houndsmen for Conservation and the California Deer Association
