Phillis Carey's Recipe of the Week Newsletter | May 6, 2018
Your weekly news about cooking classes, recipes and tour updates from Phillis Carey
Hi All!

I certainly hope you enjoyed yesterday's eventful day. Did you celebrate Cinco de Mayo or the Kentucky Derby--Tacos or Mint Juleps? This week I'm teaching a class called May Mash-Ups and I think the combo might be an interesting Mash-Up--what do you think? A dear friend of mine, who passed away the end of last year, never let a Kentucky Derby go by without at least one Mint Julep. She even had the pewter cups for the perfect presentation. I'm sure she wouldn't have minded a taco or two on the side!

In last week's Cinco de Mayo class I made a delicious Corn Dip but since that holiday has past I thought I would offer up a recipe from last Spring that incorporates creamy corn with Salmon. So give this Slow-Roasted Salmon with Creamed Corn recipe a try. It's pretty easy, especially if you substitute frozen corn the for fresh! See the recipe below.

The Diva/Queen Event is just about together. We've ordered just about everything and made most of our lists! We are going to go biodegradable this time around using compostable silverware, plates and cups--so no plastic. Just couldn't see throwing all that plastic away. If you are attending the event do start thinking about car pooling or using Uber. We will valet parking available but parking on your own may be a challenge. A reminder email will go out June 10th with all the details. Diane and I are really looking forward to seeing you all again!

I still don't have the info about the Sicily Trip for April 2019. Soon! Keep watching my newsletter for information. Do check out the info below about the Christmas Market's Cruise though. That is available and not until next December 2019-- not this December. It should be chilly but magical!

I have recently had my website updated so all the new classes are listed and you will find more recipes in the recipe section as well. The website is a quick way to check to see what I'm teaching if you have deleted my newsletter. Also, you will find links to order my 2 cookbooks and my 4 recipe collections. Please note, these are all downloads, not physical books unless you print them out. They are all easy to order, just follow the links on my website-- phillis-carey.blogspot.com.

I still have lots of openings in cooking classes for May and June though a few are now full. I'm offering some fun classes this session with a few new types of classes--how about trying May Mash-Ups or Take a Trip to the Spice Shop? See below for this sessions offering or click here to view a list. Summer classes for July, August and September will be available in about 2 weeks.

Until next time, keep cooking and enjoy it! Phillis

Recipe of the Week -- 5/6/18
SLOW ROASTED SALMON WITH MEXICAN CREAMED CORN  Serves 4.

3 T. unsalted butter, at room temperature, divided use
1 clove garlic, minced
Zest and juice of 1 lime
Salt and pepper to taste
1 T. grapeseed or vegetable oil
1 1/2 lbs. salmon fillet (the whole fillet or cut into 4 pieces)
2 medium shallots, chopped
5 small tomatillos (about 8 oz.), husked, rinsed and quartered
3 ears corn, kernels cut off (about 4 cups)
1 red Fresno chili, seeded and sliced
1/3 cup Mexican crema or crème fraiche
1/2 cup chopped cilantro

1. Preheat oven to 275 degrees. Combine 2 T. butter, garlic, lime zest, 1/2 tsp. salt and a bit of pepper in a small bowl. Set salmon on a parchment-lined baking sheet and spread the lime butter evenly over the top. Bake until the salmon is just cooked through, 20 to 25 minutes.

2. Meanwhile, met remaining 1 T. butter in a large nonstick skillet over medium high heat. Add the shallots and cook, stirring often, until soft, 3 minutes. Add the tomatillos and cook until slightly softened, about 4 minutes. Add the corn and chili. Cook, stirring often, until warmed through, about 6 minutes.

3. Remove skillet from heat and stir in the crème, cilantro and half of the lime juice; season with salt and pepper and more lime juice to taste. Serve salmon either on a bed of the corn or topped with the corn.
