Harvest Bowls: The Perfect Between-Season Meal

Caught between winter and spring? Harvest bowls are your answer. Light, colorful, and packed with goodness, they bridge the seasons beautifully. Load them up with beans and hummus for an effortless boost of protein and fiber, then finish with warm spices, olive oil, and a squeeze of lemon. Simple, nourishing, and gorgeous on the table.

Buddha Bowl with Roasted Sweet Potatoes, Spiced Chickpeas, and Swiss Chard - Edible Communities

Buddha Bowls are hearty dishes that are whole grain, protein, and vegetable-rich. We love them and our families do, too. They're a healthy meal in a bowl, so easy to make, and so pretty to serve. And they're a terrific way of using leftover grains and vegetables.

Red Clover Macro Bowl with Tahini Dressing - Edible Berkshires

Divide rice or quinoa between serving bowls and pile on the cooked kale, sweet potato, chickpeas and onion. Top with red clover sprouts, radish slices, and avocado halves. Drizzle tahini dressing on top and sprinkle sesame seeds, if desired.

Hummus Bowls with Roasted Okra - Edible Northeast Florida

Hummus packs the protein, but you could easily add lamb meatballs, grilled chicken or shrimp skewers. This meal is vegan, but would be great with some freshly-crumbled feta.
