Wine of the Month

The Yalumba Y Series of quality wines salutes our proud history of viticulture and wine making in South Australia. Significantly, the individual icons on each label reflects the labours, inventive thinking and aspirations of all at Yalumba.
The Riesling depicts the olive tree. It is said that where grapes thrive and prosper so do the olive trees. When you consider the grape growing regions of South Australia, this adage is very true.
Aromas of Apple blossom, musk, orange Sherbert, and fresh cut pearshas a great fruity weight and creaminess with overriding glavours of meyer Lemons and a moreish finish which makes it a great pair with spicy dishes such as the Grilled Tuna with Three-Herb Chimichurri Recipe.

This sensuous blend of olive and jojoba oils, beeswax and vitamin E is rich in natural antioxidants and is easily absorbed into the skin to deeply nourish and protect.  Verde  takes its freshness and green aromatic notes from our own gardens in spring. Scented with the essential oils of lavender, ylang ylang, lemon and lime. This is a great scent for the man in your life with dry, cracked hands and feet.
Fleur de Sel

Fleur de Sel is from the Guérande region of France. Known as "the caviar of salts" and is accepted by many chefs as the best of all sea salts. Fleur de Sel is the first harvest of the season.  True "Fleur de Sel" can only originate from France. It has a delicate flavor, a moist texture, and a rich, sweet flavor that melts as it touches the tongue. Not only is this among the best tasting salts, it also has the highest mineral content and is naturally low in sodium making it delicious and healthy.

With current downtown construction, we recognize that parking is an issue for our customers. We are  aware of the parking challenge and would like to suggest that our customers consider parking in the meter parking spots behind our store on Kansas City St. These spots cost 25 cents for a hour!

Grilled Tuna with Three-Herb Chimichurri
Serves: 4
Ingredients:
For the Chimichurri Sauce:

¾ cup Seasons Arbequina extra virgin olive oil
3 Tbsp. Seasons Serrano Honey Vinegar
3 Tbsp. fresh lemon juice
½ small shallot, diced
2 cloves garlic, peeled
2 Tsp. Seasons Fleur de Sel, to taste
1 Tsp. Seasons Pepe e aglio, to taste
1 Tsp. Seasons Spanish Smoked Paprika
3 cups (packed) stemmed fresh flat leaf parsley
2 cups (packed) stemmed fresh cilantro
1 cup (packed) stemmed fresh mint
For the Tuna:
1 ½ Tbsp. Seasons Arbequina extra virgin olive oil
4 (1-inch-thick) tuna steaks, about 4 lb.
1 Tsp. Seasons Fleur de Sel
Directions:
  • To make the chimichurri sauce, add the extra virgin olive oil, serrano honey vinegar, lemon juice, shallot, garlic, Fleur de Sel, pepe e aglio & smoked paprika in a blender. Pulse until well combined. Scrape down the sides & add ¼ of each, parsley, cilantro and mint. Blend until incorporated. Scrape down the sides and add the rest of the herbs in 3 more additions, blending after each additions until almost smooth. Cover and refrigerate until ready to use.
  • To prepare the tuna, rinse and pat dry each steak. Drizzle the olive oil over the tuna steaks to coat each side and season with Fleur de Sel. Grill the tunasteaks to your liking (3 to 5 minutes on each side)*.
*Serve immediately, topped with the chimichurri sauce and a side of greens.*
Note on Grilling Tuna:
  • Cook steaks over: high setting on indoor electric grill, medium high heat on outdoor gas grill or, 6 inches from hot, prepared charcoal.
  • The center should preferably be pink, or the tuna will be tough and dry. Allow to rest for 5 to 10 minutes and serve with the chimichurri sauce.
Pecorino Romano
Pecorino Romano is one of the most widely used, sharper alternatives to Parmesan cheeses. Because of the hard texture and sharp & salty Flavor, Pecorino Romano is an excellent grating cheese over pasta dishes, breads and baking casseroles. Pecorino Romano is a hard sheep cheese that goes great with Big bold Italian red wine or a light beer.
Black Olive Linguini
   Tree-ripened, salt-cured olives, fresh garlic, paprika, and black and cayenne peppers. Light red-brown with olive skin flecks. Subtle olive nose and feel. This is our old black olive lasagna recipe, now in linguini form!

Spanish Smoked Paprika
Paprika is a mild chili powder made by grinding sweet red paprika chilies after the seeds have been removed. It has a nice dark orange color and a sweet peppery aroma. This Paprika has been imported from Spain.
