Keith's Butcher Shop

Keith Schneberger graduated from Oklahoma State University with a bachelor’s degree in animal science in 2006. Throughout college, he worked as a student employee at FAPC and was a member of the OSU Meat Judging Team. After graduation he built and opened Keith's Butcher Shop, located in Burns Flat, Oklahoma, in July 2008. Keith specializes in custom processing as well as a retail market. Keith and his brother Curtis also own and operate Keith's Meat Market in Elk City, Oklahoma. 

“I picked up all the skills I needed to open a butcher shop by working at FAPC,” Schneberger said. “I think I learned more at FAPC than I did in the classroom. I knew I wanted to come back home after college graduation and there was business to be had in the food industry. My goal is to develop a good quality product, while make a good living doing it.”

Grapes on Vine
William McGlynn, FAPC horticultural processing specialist, assists Oklahoma's fruit and vegetable processors to produce high-value products that are innovative, healthy and safe. Current research efforts focus on the evaluation of processing and quality characteristics of Rubaiyat grapes, a variety of wine grape not currently grown commercially in Oklahoma, as well as developing a novel high-protein, peanut-based product enhanced with probiotic bacterial cultures.

Feeding Success: Food Science Students Honored with Gilliland Memorial Fellowship
FAPC announced the winners of the 2020 Stanley E. Gilliland Memorial Fellowship in Food Science and honored two graduate students, Caitlin Karolenko and Conner McDaniel. The fellowship was created by the family of the late Stanley E. Gilliland to provide scholarships for food science students and so he could continue to impact these students after he lost his battle with cancer.

Remembering Paul Schatte

We recently lost a beloved friend and supporter of not only FAPC, but also the OSU Division of Agricultural Sciences and Natural Resources.

Paul Schatte of Ponca City took pride in being an entrepreneur, small business owner and member of the FAPC Industry Advisory Committee. He was co-owner of Head Country Food Products and also owned Paul's Food Products. He often could be found developing recipes and trying new ideas for food products.

Paul will be missed by so many.

Nathan's Hot Dog Eating Contest
A Dog Story

"If I look back over the past month, I became aware I had overlooked and neglected to celebrate some important food holidays that featured hot dogs. I am familiar with July 4 but completely forgot about Nathan’s Famous Hot Dog Eating Contest. This contest has continued on July 4 at Coney Island since the first recorded contest in 1972. I have never witnessed the Nathan’s eating contest but have enjoyed some hot dogs at Nathan’s Coney Island and other locations. In 2020, the contest continued with only 10 eaters at an undisclosed location due to COVID-19 spacing and gathering size limits."
