Open for business: Cowboy Meats opens retail store

When Joel Jackson was hired as the meat pilot plant manager at FAPC, his goal was to open a Cowboy Meats Retail Store. Available to the public, the Cowboy Meats Retail Store is now open 1-5 p.m. every Friday at FAPC.


“We had a great opening day at the Cowboy Meats Retail Store,” Jackson said. “I was excited to meet many of the new customers and hear about their connection to the university and FAPC."

Bedré Fine Chocolate


The story of Bedré Fine Chocolate began over four decades ago. A small chocolatier operating out of the former Homer Elementary School near Ada, Oklahoma, Bedré Fine Chocolate was determined to make the highest quality chocolate.


Bedré Fine Chocolate remained a local staple, and in 2000, the Chickasaw Nation purchased the company and gave it new life. Preharvest and Postharvest Food Safety - Divya Jaroni, Food Microbiologist


This featured research project focuses on the development of a Direct-Fed Microbial (DFM) for reduction of Shiga-toxigenic Escherichia coli (STEC) and Salmonella in Beef Cattle. This on-going project stems from the Gilliland Lactic Acid Bacteria (LAB) cultures repository at Oklahoma State University.


Several experiments are being conducted to select LAB for a DFM that could inhibit STEC and Salmonella in the intestinal tract of live cattle. The developed DFM will be further used in cattle feeding trials during Phase-II of this project. Funding for this project is provided by the Oklahoma Agricultural Experiment Station and OSU Technology Development Center.
