The free A²ZERO Community Cookbook is now available online, and it focuses on plant-based meals, local foods, and reducing food waste. While it is not all vegan, there are many vegan recipes and recipes with suggestions for how to modify them to be completely plant-based. Many of the plant-based tips were provided by VegMichigan (many thanks to volunteers Val, Nicola, and Maryann for helping to provide those tips). VegMichigan Program Manager Kim Korona has a recipe in the book that includes a VegMichigan spotlight. See her "Not Too Hot Chili" recipe here.
