For those of us whose grandparents are no longer here, missing them, and holding their memories in our hearts can be lonely. If they were with us, I would spend time listening to their stories, share news of the world and favorite activities. I would make their recipes, read to them, and share stories about work and stories and activities about my children and grandchildren.

MY SON DIDN'T HAVE A JEWISH GRANDPARENT, SO I ADOPTED ONE

Jewish life and culture are centralized around family structure, from milestones to holidays to gatherings and community programming. It’s a part of Jewish life I have always loved and found beautiful — but that has always been bittersweet for me, because I wasn’t born into a safe, functional family. I’m a single parent and after my son was born, despite my tireless efforts to prove otherwise, it gradually became apparent that my son and I couldn’t have a safe or stable life if I remained in contact with my biological family (except, thankfully, my brothers, to whom I am extremely close, along with their wives and children).

(CARE)GIVING AND TAKING: MAKING TIME FOR YOU

Taking care of a loved one can be difficult. So can ensuring that your own needs are being met during this challenging time. It's easy to feel isolated but Jewish Family Service and Jewish Senior Life are here to offer family caregivers support, comfort and a sense of community.

Israeli Breakfast Taco
Cheese "Tacos"
4 slices cheddar cheese or 1 and 1/2 cups shredded cheese
Salt, to taste
Pepper, to taste
Olive Oil, for sautéing
For Serving
1 red onion, sliced into rings
Cream cheese, for spreading
4 eggs, scrambled
Ketchup (optional)
Prepared techinah, for drizzling
Israeli Salad Salsa
1 cucumber, diced
1 plum tomato, diced
2 pickles, diced
2 tablespoons chopped fresh parsley
2 teaspoons Olive Oil
Dash of hot sauce (I use Frank’s)
Salt, to taste
Pepper, to taste
Prepare the Cheese "Tacos"
1) Preheat oven to 400 degres Fahrenheit (200 degrees Celsius).
2) Arrange the cheese slices on a parchment-lined baking sheet or form four circles of shredded cheese, one-third cup each, on the parchment paper. Season lightly with salt and pepper. Bake for seven minutes.
3) Wait two minutes for the cheese to cool slightly, then bend it over the edge of the pan into the shape of a taco shell. Allow to cool for another two minutes.
Prepare the Breakfast Taco Components
1) Meanwhile, heat olive oil in a small pan and add the red onion. Season with salt and pepper and sauté until the onion is translucent, even slightly charred.
2) Combine cucumber, tomato, pickles, parsley, olive oil, hot sauce, salt, and pepper. Set aside.
Assemble
1) Smear the inside of a cheese taco shell with cream cheese.
2) Fill with scrambled eggs. Drizzle with ketchup, if desired.
3) Add a few rings of sautéed red onion.
4) Top with Israeli salad and drizzle heavily with techinah. Serve immediately.

A Daughter Just Like You
I always enjoy uplifting visits with Mr. A. in his apartment. One encounter left a deep impression. The following was part of our conversation:
He said, “Yesterday, a woman in her sixties approached me and respectfully inquired of me, by any chance, are you Mr. A.?”
I said, “Yes, why do you ask?”
She said, “I believe you were my teacher in eighth grade. You were kind and supportive. In my yearbook you inscribed a special personal message and I have thrived on that message ever since. You wrote, “If I ever have a daughter, I wish her to be just like you!”
I responded with great admiration. “Mr. A., you touched a life and most likely many lives forever!”
Please know, you, too will be remembered forever. “What an honor to know you”.
