INDEPENDENCE DAY

When I was growing up, the 4th of July meant Summer was in full swing. I remember Bar-B-Ques at our house and visiting the neighbors who entertained around their pool… My mother used to make a special 4th of July dessert - an edible American flag. She lightly thawed vanilla ice cream and mixed in strawberries, then shaped it like a flag in a rectangular pan, adding layers of delicious cake she dyed red and blue with food coloring, then froze it. The top was white buttercream icing. She let me place the “states” (blueberries) in the left corner. The stripes were double rows of raspberries. We gorged ourselves on hotdogs and hamburgers and corn on the cob and other delights. We burned our fingers on sparklers and laid on green army blankets under the stars waiting for fireworks to begin. There was something so magical about it all. If we had worries, I wasn’t aware of them. My own worries concerned mosquito bites. Those were simpler times. 
THOUGHTFUL DISCUSSION
Rabbi Krakoff lead an important and meaningful discussion at Meer Apartments this week. The topic, “Why bad things happen to good people” is the subject of many books and articles.
CONGRATS JSL AWARD WINNERS
Meer Dining Services Manager, Laura Shields, won the LeadingAge Michigan Shining Star Award. 2022 JSL Volunteers won the Volunteers of the Year Award. The awards were given at the May LeadingAge Conference in Grand Rapids. LeadingAge created 2 videos to highlight our JSL special award winners.

FAMILY FUN DAY
Approximately 300 residents along with family members and JSL staff spent the day together this past Sunday on the Oak Park campus. The 2022 JSL Family Fun Day included a petting zoo, trackless train, a live DJ, face painting, cotton candy, hotdogs, and ice cream.
 
Cassidy Carman, Prentis Life Enrichment Coordinator described the day, “To me Family Fun Day was all about getting people together. COVID has been hard, especially for our seniors, so now that it’s safer to gather, we absolutely should. I’m so glad the weather held for us, and residents, staff, and all our families had a blast. I think my favorite part was learning the ‘Bikers Shuffle’ along with our residents. We could not have pulled this together without the help from my wonderful team. Special thanks to Darrin and Nita who showed up super early to help set up and made sure we had everything we needed to make it successful. I can’t wait for next year’s event."

THIS WEEK'S RECIPE
Chili Lime Pineapple Salmon

Ingredients
2 teaspoons chili powder 
Zest and juice of 1 lime 
1 teaspoon Salt
1 and 1/2-pound salmon
1 tablespoon oil
1 can Pineapple Chunks, drained

Garnish
Chopped fresh mint
Honey (preferably chili infused)

Directions
1) In a small bowl, combine chili powder, lime zest and juice and salt.
2) Spread half of the chili lime mixture onto the salmon.
3) Heat oil in a pan over medium-high heat and add the pineapple to the pan, spreading in an even layer.
4) Make space for salmon in the pan and place it in skin side up.
5) Sear until you see the edges starting to change color (about five minutes) and flip, cooking for another two minutes.
6) Remove salmon from pan and top with pineapple.
7) Garnish with fresh mint and honey.

George Washington’s Letter

In 1790, newly elected President George Washington wrote a 340-word letter to the congregants of Touro Synagogue in Newport, Rhode Island — now considered the oldest standing synagogue in the United States. In this missive, Washington promised Jews equal rights and freedom from oppression for their religious beliefs:

“May the children of the stock of Abraham who dwell in this land continue to merit and enjoy the good will of the other inhabitants—while everyone shall sit in safety under his own vine and fig tree and there shall be none to make him afraid.”

Ironically, the synagogue’s namesake and first leader, Isaac Touro, was an avowed Loyalist. During the Revolutionary War, he fled the colonies to British-ruled Jamaica, where he lived out the rest of his life.

May we all merit to enjoy equal rights and the freedom of oppression for our religious beliefs.
