Why is this night of Passover different from last year’s? For those of us with recent bittersweet memories of socially distant Passover celebrations, while sitting at computer screens on our beloved Zoom calls, we fought the isolation from our people and used technology as we drank the four cups of freedom.

FOOD AS A STORY

There’s not much as tied to tradition as food. For every event or milestone or holiday in life, there’s a dish to go along with it, often becoming almost synonymous with whatever it represents (what’s the first thing that comes to mind when you think turkey?).

But it’s hard to imagine foods that are more closely intertwined with a celebration than the foods of Passover.
THIS WEEK'S RECIPE
Easy Flourless Hazelnut Cookies

Ingredients
1 (12-ounce) jar Hazelnut Butter
2 eggs 
1/2 teaspoon kosher salt
1/2 teaspoon Ground Ginger
3/4 cup brown sugar

Decoration Ingredients
1 cup White Chocolate
2 tablespoons diced freeze-dried strawberries
1/4 cups finely chopped roasted, salted hazelnuts

Directions for Cookies
1) Prepare a cookie sheet or sheet pan with Parchment Paper. Do not grease the pan or the paper. Preheat oven to 400 degrees Fahrenheit.
2) Place all cookie ingredients into a medium mixing bowl. Combine using a hand mixer on low speed until the ingredients combine, then increase to medium speed for two minutes to fully smooth out the dough. Ignore or drain off excess oil.
3) Use a two tablespoon scoop to place dough balls one inch apart on the prepared pan. Then use a fork to gently flatten the dough balls.
4) Bake at 400 degrees Fahrenheit for 10 minutes. Then immediately remove the cookies from the pan onto a cooling rack.

Directions for Decoration
1) Melt the chocolate using a double boiler method. Place a glass bowl over a pan of boiling water. Make sure the bowl is big enough not to sink into the water.
2) Dip the cooled cookies halfway into the melted chocolate. Place back onto a cooling rack. Sprinkle with hazelnuts and strawberries. Place the cookies into the refrigerator for 5 to 10 minutes to set up.

Note: Place a clean sheet pan under the cooling rack to catch any drips from the chocolate.

Pledge to Polish Your Soul

Passover is upon us. Most are familiar with the Passover Seder ceremony. With family and friends gathered at the table, unique dishes and symbolic foods served, we joyfully chant the story of our Exodus from Egypt.

Let us examine the less popular night before Passover. With a wooden spoon, a feather, a candle and paper bag we search our homes for anything considered leavened (non-Passover provisions.) We also search our inner hearts to rid ourselves from any trait that resembles the nature of leavened products.

Leavening products rise and puffs up. In our daily conduct, this translates into arrogance and callousness. These negative traits must be absolved before celebrating Passover, the holiday of liberation. 

So, now days before Passover is a most fitting time to pledge to polish your soul, to subdue the negative and to grow the positive.

You will find your soul to be a most magnificent piece of furniture requiring the pledge to polish to perfection.
