Pennsylvania Shakespeare Festival’s “Play On!” Community Tour brings free performances of William Shakespeare to libraries, parks, and community centers all over the region. And the Easton Farmers' Market is proud to be one of the chosen locations. This year's featured performance is The Comedy of Errors. Follow the entertaining escapades of two sets of identical twins separated at birth and residing in the same town. Mistaken identities make for hilarious complications until chaos gives way to clarity, and mayhem to mirth, when brother is reunited with brother and a town turned upside-down is turned right-side up again. Escarole is a leafy green that's part of the chicory family, which also includes radicchio and endive. Like the rest of the chicory family, it's is considered a "bitter" green, It's a favorite in Italian cooking and this recipe is a classic - with breadcrumbs, black olives, garlic, capers, fresh parsley, anchovies and more.

As your market manager, I have to admit, I'm wondering when Kevin is going to run out of ravioli ideas. Yet here we are with yet another scrumptious creation... Chicken Parm!
This week's full line-up:
Ravioli: Chicken Parmesan ravioli (yep, it's like chicken Parmesan inside a ravioli!), lobster ravioli (these are light, sweet lobster ravioli and comes with a simple lemon cream sauce recipe), sunshine ravioli (orange zest, ricotta and honey--a little balsamic glaze, olive oil and Parmesan is all you want on top of these), Italian meat ravioli (half sweet Italian sausage and ground beef--yep, we nailed this one), Italian ricotta cheese (our classic), Spinach ricotta (our other classic).
Pierogi: Potato onion chive, Smoked bacon and cheddar potato, and sharp cheddar and potato.
