 Summer Harvest Recipes



Eggplant Marinara Flatbread

Ingredients:
  • 4 tablespoons (about) olive oil, divided
  • 6 1/3- to 1/2-inch-thick eggplant rounds (3 to 4 inches in diameter; from 1 large)
  • 1 loaf ciabatta or pain rustique, cut horizontally in half, trimmed to 9-inch length
  • 1 1/4 cups purchased fresh marinara sauce
  • 2 ounces soft fresh goat cheese
  • 1/3 cup chopped fresh basil plus 6 whole leaves (for garnish)
  • 1 cup coarsely grated mozzarella cheese (about 4 ounces)

Preparation:
  • Preheat oven to 400�F. Heat 2 tablespoons oil in large skillet over medium-high heat. Sprinkle eggplant with salt and pepper. Place in skillet. Cover. Cook until tender, turning, 10 minutes. Transfer to plate. Brush cut side of bottom half of bread with rest of oil. Cook in skillet, cut side down, until golden, 1 minute.
  • Place bread, cut side up, on baking sheet. Spread with 3/4 cup sauce. Crumble goat cheese over; sprinkle with chopped basil. Top with eggplant. Mound mozzarella on eggplant; spoon remaining sauce over.
  • Bake bread until topping is hot and crust is crisp, about 12 minutes. Cut into 6 pieces. Garnish with basil leaves.

Zucchini Fritters

Ingredients:

Soy Dipping Sauce
  • 3 tablespoons unseasoned rice vinegar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 1/2 teaspoons sugar
  • Crushed red pepper flakes
     
Fritters
  • 1 1/2 pounds zucchini (about 3 medium), grated
  • 1/2 teaspoon kosher salt plus more for seasoning
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 3 tablespoons finely chopped fresh chives
  • 1 tablespoon cornstarch
  • Freshly ground black pepper
  • 1/3 cup vegetable oil

Preparations:

Soy Dipping Sauce
  • Mix vinegar, soy sauce, sugar, and a pinch of red pepper flakes in a small bowl until sugar is dissolved. Set aside.
Fritters
  • Place zucchini in a colander set in the sink and toss with 1/2 teaspoons salt. Let stand 10 minutes, then wring zucchini dry in a clean kitchen towel. Place zucchini in a large bowl and gently mix in egg, flour, chives, and cornstarch; season with salt and pepper.
  • Heat oil in a large skillet over medium heat. Working in 2 batches, drop 1/4-cupfuls zucchini mixture into skillet, flattening slightly; cook until golden and crisp, about 3 minutes per side. Transfer fritters to a paper towel-lined plate; season with salt. Serve with soy dipping sauce.
  • DO AHEAD: Fritters can be made 30 minutes ahead. Keep warm in a 200� oven.

Pumpkin Wheat 
Honey Muffins

Ingredients:
  • 1/2 cup raisins
  • 1 1/2 cups whole wheat flour

Directions:
  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan, or line with paper liners. Place the raisins in a cup, and add enough hot water to cover. Let stand for a few minutes to plump.
  2. In a large bowl, stir together the whole wheat flour, brown sugar, pumpkin pie spice, baking powder, baking soda and salt. Make a well in the center, and put in eggs, pumpkin, oil and honey. Mix just until the dry ingredients are absorbed. Drain excess water from raisins, and stir in along with the walnuts. Spoon into muffin cups so they are about 2/3 full.
  3. Bake for 18 minutes in the preheated oven, or until the tops spring back when lightly touched. Cool in the pan before removing from cups.

I am so excited to welcome my precious son, Solemon Sky into this world... 

...Born on his father's birthday, July 9th, in beautiful Mt. Shasta City, California!  

I have wanted to have a baby for as long as I can remember, so this is TRULY the greatest gift and blessing I could ever imagine. 

I thought I would take this newsletter as an opportunity to share some of my favorite baby products and mothering suggestions with you!

I am grateful to live in a time and place when an incredible variety of organic and natural products are available, so that I can raise my child in the healthiest way possible.  And of course, it is quite the bonus to have a natural bedding company so that I can make the best custom bedding for him to sleep with! 

It seems that a lot of the bedding, mattresses and clothing available for babies are made of synthetic, chemically treated materials that are terrible for their health and for the planet.  Luckily I am aware of this and have the ability to go all natural for my baby.  So far, my baby sleeps with us in our King size wool bed which is working out great!  He sleeps like a king and I love having him with me.  For when the time comes, we have his room set up with his crib, comprised of a Shepherd's Dream wool Crib Mattress, a Wool Mattress Protector, a Wool Filled Crib Comforter with an Organic Cotton Cover and Coyuchi Organic cotton fitted crib sheets, all inside of a Pacific Rim, pure maple bed frame...ooh la la! I wish I could fit in there;)

We have several other little sleep areas throughout the house that I have customized with wool including a Moses basket with several layers of wool felt cut to fit, a bassinet cradle with a custom made wool filled pad inside and a Mamaroo with a layer of felt to make it more breathable. And the most amazing wool creation of all, is a hand felted dolphin cocoon that our dear Logan, made for my little Sol.

It's all wool, it's all cozy and he loves it!

There are some other baby products I am very happy with as well.  For his car seat, we went with the Graco SnugRide Classic Connect 30 infant car seat and then his Oma (my mother, Eliana)customized it by adding wool felt to make his riding experience extra comfy. He sleeps great in his car seat and smiles a lot in the car!

We like to keep him on us as much as possible, so we have enjoyed using the Ergo, the Moby and the Maya wraps.  He usually takes at least one of his naps while walking him in a carrier. He seems to like the Ergo the best, but they are all good wraps for different ages and times.   

In an attempt to be as environmentally conscious as possible, we have decided to go primarily with G Diapers with the reusable cotton inserts.  Not only are they less wasteful, but they are styling too:) 

Most all of our clothes have been hand me downs, but the organics that we have found and liked the most would be Under the Nile and Organic Natural Charm.  We also love the swaddles, towels and changing table covers by Aden + Aneis

In an effort to keep my breastfeeding going healthy and strong and to give papa and grandma's and opportunity to feed him too,  I am using the Purely Yours breast pump by Ameda which is easy to use and effective.  Last, but definitely not least, we don't know what we would do without our yoga balls, including our yoga ball chair by Isokinetics to calm Sol when he's feeling uncomfortable. Of course, the list goes on and on, but these are some of the most essential items we have found so far. 

In addition, I would recommend the following books to all new mothers and parents: The baby book by, The womanly art of breastfeeding, the Vital Touch & The Kind Mama.

 

  So far, I am amazed by how in love I am with this special little human who we created!  It has been the most challenging and rewarding experience of my life so far.  I look forward to this incredible journey of motherhood and will joyfully share my experiences with you in coming Shepherd's Dream blogs and newsletters.

Ashland is well-known for it's fabulous Oregon Shakespeare Festival and it's beautiful 100 acre Lithia Park, which is home to a great number of tree species from around the globe (the perfect place for a relaxing stroll). In addition to these wonderful attractions, you can check out, first-hand, a variety of natural (and chemical-free) bedding options in our lovely showroom located in the historic railroad district of Ashland. 

Yet another perfect excuse to visit!


 As you would imagine,
 we have our cozy wool beds available to try out,  but we also have a variety of other mattresses and bedding available.  Most recently, we started offering the Savvy Rest Organic Serenity Mattress, Latex mattress topper and latex pillows. Soon to come, we will be showcasing McRoskey Mattress Companies natural innerspring mattress, hand made in San Francisco.  

We offer Pacific Rim Woodworking's solid maple bed frames and furniture as well as Organic cotton sheets and towels by Coyuchi.  We have recently begun offering wool socks by Icebreaker and will be adding some of their wool clothing to the store soon.
