Keep your kitchen cool this summer with pizza on the grill! Use your favorite pizza dough – ask your local pizzeria, get it from the grocery, or make your own using my favorite recipe:
Make-Ahead Pizza Dough Recipe
Grilled BBQ Chicken Pizza
1 small red onion
1 medium green pepper
2 cups shredded cooked rotisserie chicken (or canned chicken)
1 cup barbecue sauce,
Cornmeal for dusting
1 lb prepared pizza dough, thawed if frozen
6 oz mozzarella or marbled cheddar cheese, grated
Prepare grill for indirect cooking over medium-high heat.
Slice onion crosswise and separate slices into rings.
Remove top from green pepper and scrape out seeds. Cut into rings.
Combine chicken and 1/2 cup of the BBQ sauce in a medium bowl.
Generously sprinkle counter with cornmeal; place dough on cornmeal. Use a rolling pin to form dough into a 12-inch circle.
Place dough onto a grill-safe pizza pan, gently stretching to cover bottom.
Spread remaining 1/2 cup sauce evenly over crust to within 1/2 in. of edge. Top with chicken mixture, onion and green pepper; sprinkle with cheese.
Place pizza pan on grid of grill. Grill, covered, 18-22 minutes or until crust is deep golden brown, carefully rotating pan occasionally. Remove pizza pan from grill; cut pizza into 12 slices.
