FALLING FOR BEEF
THIS OCTOBER BEEF MONTH
By Registered Dietitian Elesha Ergle
Changing leaves, football season, cooler weather…it’s definetly October! Here in Alabama, October is Beef Month, so let’s get some new recipes to highlight beef’s awesome taste and nutrition. Beef is a great source of protein with 25 grams per 3 ounce serving and only 173 calories. Beef is also a good source of zinc, which helps promote a healthy immune system. Proper nutrition to include high quality proteins like beef, helps keep our bodies healthy and strong, especially after all that Halloween candy!
Beefy Stews
Slow Cooking, Fast Eating
Slow cooking works great by tenderizing tougher, less expensive, cuts of beef, and also makes weeknight meals a breeze. Beef up your tailgate, or your busy weeknight, with this Easy Slow Cooker French Dip, which utilizes a rump roast. Lasagna is a beefy favorite, but can be time consuming to cook. Try this Hearty Slow Cooker Lasagna for a one-pot meal with just a little prep and it will be ready when you get home from a busy day.
Beefy Campfire Classics
After you're done Trick-or-Treating, build a fire in the backyard! P.S.- you can cook more than s’mores on that fire! Bring the beef out and cook up some Campfire Dutch Oven Chili with Cornbread, or Campfire Steak Fajita Foil Packets. Grab you some all-beef hotdogs or sausages for campfire roasting and serve on a bun with all the fixings. It's a sure way to keep the fun going on Halloween night!
