Smoked chicken is one of the easiest and most delicious foods to smoke in your SmokinTex smoker!
They're great to have for the weekend.

"Your smoker has done it again!
Brined for about 18 hours in water, salt, sugar, Riesling (ran out of sugar and had to get creative), juniper berries, coriander, fennel, black pepper, raw onions, fresh bay leaves, brown mustard seeds.

Smoked with 2 oz. of apple wood at 225°F for six hours. Just fooling around with different flavors. Not over the top smokey, just right. Sooooo juicy!"

Brisket Tip
Smoked Brisket

Scott Wallace, our National Consumer Products Manager, and awesome smoke master, suggests when reheating and holding a brisket to temp says:                 

"Food Service and health departments will say a minimum 145°F degrees for a maximum 4 hours.
I prefer to serve brisket hotter than that and usually set the smoker for around 165°F - 175°F. I've gone 5-6 hours before. The most noticeable factor in my opinion is the texture. The meat gets a kind of a grainy feel after about 3.5 - 4 hours.
By the way, foil wrapping will help preserve the moisture."

Make sure you buy a brisket that is flexible in the package. This will insure a tender brisket.

This is another easy recipe. Use just a hand full of cherry wood chips which gives the salmon a delicate smoked flavor.
