During one of her frequent strolls around the farm, our girl AppleBees stopped by to see if these strange new ruminants were eating all of her grass. Satisfied to see there was plenty for everyone, AppleBees moseyed over to the nearby kangaroo pen to lie down and indulge in her favorite activity -- binge-watching "kangaroo TV."

Treat of the Month
Want to build a snowman but there's no snow? We've got a little trick up our sleeve with our January Treat of the Month.

The Snowman features a scoop of vanilla ice cream topped with a white cake ball (with a snowman face!). Cinnamon sugar pretzel sticks for arms and chocolate chips for buttons round out this fun, tasty treat. Of course we couldn't forget a bed of whipped cream snow, too.

Pizza of the Month
Lore has it that the classic Reuben sandwich was created in 1925 by Nebraska grocer Reuben Kulakofsky to feed a group of late-night poker players.

We'd like to think Reuben would be proud to see his legendary idea land a century later on a legen-dairy pizza.

The Reuben Pizza starts with a fresh crust slathered with Thousand Island dressing. We then top it with crumbled corned beef, sauerkraut and a mountain of mozzarella cheese.

A Very Dairy Christmas success
Our sold-out holiday event, A Very Dairy Christmas, was a ton of fun! Families enjoyed a delicious holiday charcuterie spread and kids got to enjoy crafts, games and visits with Santa and Pogo the kangaroo. Of course lots of snuggle time was spent with brand-new calf Elf. We can’t wait to do it all again next year!

Seasonal ice cream flavors
January is here and the cold is starting to set in. But let's be honest. It's NEVER too cold for ice cream, especially our winter flavors!

Apple Pie, Pumpkin Pie and Candy Cane ice creams are sure to perk you up during the winter doldrums!

All three are available in treats from the dip cabinet at each store. Apple Pie and Pumpkin Pie are also available in half-gallons and pints!
Meet the Moo Crew
We’re convinced Charity Miers, our featured Moo Crew member this month, has at least a dozen hands. Seriously, she's a whirlwind!

Charity is manager of our Waterloo store, a cheese connoisseur in charge of ordering our Wisconsin cheese varieties, and a skilled cake decorator.

Customer of the Month
There's no distance that can separate our January Customers of the Month from Hansen's ice cream.

Marshalltown residents Lori and Brad Rozell toured the farm last fall. It turns out they came for the kangaroos and keep coming back for the ice cream.

"I tried some ice cream and was hooked," Lori says.

The couple now regularly drive to our Cedar Falls store to pick up their favorite ice cream flavors as well as Hansen's dill cheese curds, milk, chocolate milk and butter.

"We love that Hansen's Dairy is a family operation," Lori notes.

Cow of the Month
With the magic of Christmas in the rearview mirror, it's a matter of time before we're tired of cold and gray weather. Our January Cow of the Month is here to help us think warm thoughts.

Mexico is 3 years old and has had two calves -- a boy and a girl. She's a charmer in the milking parlor, making our milking crew's job as pleasant as a Cabo San Lucas breeze.

Mexico's milk butterfat is high at 4.3%, right up there with herdmate butterfat champ Apple Mini, who milks a hefty 4.6%. Comparatively, most Holsteins average 3.2%-3.6% butterfat.

You'll notice a change in our monthly newsletter recipe going forward. Reinbeck resident Julie Grunklee, longtime submitter of our newsletter recipe, hung up her apron in December to pursue other projects. We're grateful to Julie for sharing her culinary talents with our newsletter readers. Thanks, Julie! We wish you success in your future endeavors!

Beginning in this issue, we'll be sharing recipes from our friends at Midwest Dairy and other United Dairy Industry Association partners. We're starting with a tasty, comfort food recipe -- Cheeseburger Macaroni Casserole. If you like, double the recipe and place the second casserole in the freezer for an easy meal at a later date.

Cheeseburger Macaroni Casserole
Prep time: 20 minutes
Cook time: 35 minutes
Total time: 55 minutes
Serves: 4
Calories: 574 per serving
Ingredients
  • 1 lb Hansen's Dairy Wagyu or Holstein ground beef*
  • 1/2 cup chopped onion
  • 8 ounces elbow macaroni or penne or rotini pasta
  • 1 medium tomato, chopped
  • 1 8-ounce can tomato sauce
  • 1/2 tsp seasoned salt (optional)
  • 1/4 tsp black pepper
  • 1 cup cheddar cheese, shredded*
* Items that can be purchased at Hansen’s Dairy stores
Directions
  • Preheat oven to 350F.
  • Spray an 8Γ—8-inch baking pan with nonstick cooking spray; set aside.
  • In large skillet over medium heat, cook ground beef and onion until beef is brown and onion is soft; drain.
  • Cook macaroni according to package directions; drain. Spoon macaroni into prepared pan.
  • Spread beef mixture and chopped tomato over macaroni.
  • Pour tomato sauce over beef.
  • Sprinkle with seasoned salt, pepper and shredded cheese.
  • Cover loosely with foil and bake for 35 minutes or until cheese is melted and edges of casserole are bubbling.
