Spotlight on Yacon
This tasty tuber is similar in texture to a water chestnut or jicama. Juicy and crisp it is comparable in taste to carrots and Asian pears. In fact, it is sometimes described as a 'sun carrot', 'ground pear' or 'apple of the earth.' Even though it has a sweet taste it is low in sugar and contains no starch.
There are many ways in which to prepare and serve Yacon - it can be made into a delicious syrup, bake them as chips, include in soups, salads, desserts or a stir fry, but one of the best ways to eat it is raw! Amorphous Gardens on the North end of the market has Yacon!
