Let's get real people, The ECG is no fashion icon.  So when talking fashion, we need to bring in the big guns.  And there is none more fashion forward in the cake biz, than the one and only Elisa Strauss of Confetti Cakes.   
Needless to say, the ECG is tickled pink (or whatever shade she'd supposed to be tickled in this year) that Elisa has come out with an amazing line of Fashion molds and Imprinters for Marvelous Molds.  These molds are not only incredibly beautiful and versatile, but they have that patent-pending self-cutting edge that makes them ridiculously easy to use! 
So let's dive in, with Elisa's Pearl Buckle Mold.  One mold, makes a perfect pearl-ring buckle and strap.  That's cool.  You know how many sugar pearls the ECG has lost to the floor trying to create this look?  Maybe this can be explained by the fact that one of Elisa's first jobs was working for Ralph Lauren.  One of the ECG's first jobs was at the Foot Locker in Fox River Mall.  Let's stick with Elisa, shall we?  Oh, check out all of Elisa's Buckle Molds!
  Onto some bows.  This little pleated number would put Coco Chanel to shame!  And this Pinwheel Bow?  Come on, don't get me started.  It's the perfect addition to any cake, and you don't have to spend a second cutting, looping, supporting, crying, etc. to get it done. 
Now let's talk texture. Any good fashionista can tell you that good fashion is in the details.  Elisa knows this, so she's created the most realistic high-fashion impression mats on the market.  Her Alligator mat could fool any Everglades Aficionado.

Two wedding trends that just got a whole lot easier!  Sequins and Lace.
If you haven't done a sequined tier yet, it's only a matter of time.  This look is HOT for wedding cakes and any occasion worthy of a little glam.  And the best part is, it's a pretty easy technique.  The Evil Cake Genius did her first sequined tier last year, and has plenty lined up for this summer, which is why she almost lost her mind when she came acro ss our new est product: 
EDIBLE GOLD SEQUINS!! 
As any of you who ha
s had the pleasure of making one of these bad-boys, you know that they are typically made with pastel edible sequins (sprinkles) and painted metallic once they're stuck to the cake.  It's a beautiful look, but the ECG is always driven a bit mad by trying to cover all of the color variations in the sprinkles.
  As you may have experienced yourself, the gold doesn't look quite the same on a pale blue sprinkle as it does on a white one, and try as she has, the ECG has not been able to source all white sprinkles.  But ask and ye shall receive!  Nope, she didn't find white sprinkle sequins, she found Metallic Gold!!  Can I get an amen?!?!
Imma' do me a cake without touching a paintbrush or airbrush, yes I am.  Yes, yes, yes I am! 
Now, while we're talking about wedding season, it's about time you got yourself our most popular lace stencil.  Our Mantilla Lace Stencil has proven itself our most popular acrylic lace stencil, and for good reason.  It's STUNNING! Well..... WAY. That's right, we said it. WAY.
This stuff will warp your cakey mind!!!
Introducing FLEXIQUE

Create edible fabric by brushing this stuff on a silicone mat and allowing it to dry, or by coating wafer paper or even printed icing sheets on both sides. It will make legit edible fabric that will drape and flow like the real thing. You can tie bows with this stuff and even stretch it without any cracking or breaking. If you're still able to wrap your head around the awesomeness, try this...brush it on a texture mat and allow it to dry.  It will hold the texture.
Seriously ENDLESS possibilities, and the ECG has only just begun to play with this stuff!

The cake below is so Sugary, so Skully and SO darn easy that it will, well, blow your mind right inside that 'ol brain cage of yours (that's your skull, you numbskull). So, what do you need to know about it?
Well, we used 3 products AND not coincidentally have 3 Videos showing us use them in different ways, so sit back, relax and get ready to watch a little sugar skull action.
  
This cake uses our NEW Seamless Sugar Skull Mesh Stencil, our Rose Tattoo Mesh Stencil Set and our Sugar Skull Cookie Set (used for the toppers). Three stencils that you're gonna need to have in your arsenal.  
 
      Let's see just how fast and easy this here cake was to make!

But, Hey, Evil Cake Genius...what if I like my skulls a little less sugary? 
Ahh, we got you...How about some super scary, Harley-riding, sugar-free, scary-ass skulls? 

Now, the first time we saw this skullarific design on a cake it was by the scary-talented, Donna, at Daisy Cupcake.  She showed us her amazing cake when we met at Cake International in the UK last year.  She DIDN'T use one of our stencils to make it.  She used a small acrylic skull stencil that she airbrushed, then moved, then airbrushed, then moved, you get the pattern.  So when our friend Anne-Marie over at Anne Marie's Cake Studio contacted us with a picture of a similar cake, asking if we could make her a stencil that would do this, we said, sure...but let's make it way easier and faster! 
So was born our Gothic Skull Mesh Stencil.  This bad boy lines up seamlessly to fit side by side around any tier, and the best part is, you stencil it with Royal Icing ONE TIME!  One swipe, and you're set! (well, a second swipe for the back half of the cake, but still, not bad!)  The pattern stencils so crispy and scary that you could just leave it as is, or take out that old airbrush and lightly airbrush around the edges of the skulls for that super spectral, eerie look.
So whether you want your skulls to be scary Harley-riding, or pretty, Margarita-drinking...as always...the ECG's got you covered.  You're welcome.

Simple should be Simple!   
How many times have you heard "we just want a simple cake" followed by a description of something that is NOT SIMPLE?
 
The ECG has, and it's time to take back "simple"!  How about Polka dots.  Simple, Right?  Yes, simple, but insanely time consuming!  The Evil Cake Genius is convinced that if she added up the time that she has spent cutting out fondant dots, it would add up to at least a year of her life.  Let's not add the time it takes to stick them on a tier in a simple "random" pattern, that isn't random...you know it's not random, dammit!  If it were random, it would in no way be aesthetically pleasing.  Nope, painstakingly planned "random" is what it is.  Well, what it really is, is time consuming.  And time is money in this cakey-bakey game.  Many of you have already discovered our Dissipating Dots and Tiny Dots Stencils for this very reason.  But in our never-ending quest to end the dot madness, we've just created our Lots of Dots 2 stencil set.
    
 Evil Cake Minion Jenna requested this stencil for her very own Little Sister's wedding cake.  After all, Jenna was not only the cake maker for the event, but she was the Maid of Honor, too.  That's such a sweet combination of INSANE STRESS, isn't it?  So rather than hand-cutting three different colors of metallic fondant dots, we made her this set of stencils created to layer with airbrush colors.  Genius!!
 
Here's the breakdown:
She airbrushed the stencil with a mixture of Dinkydoodle Silver Airbrush Paint, Vodka, and our amazing Silver Powder (you can airbrush with just a mixture of vodka and silver powder, but the Dinkydoodle airbrush paints are made to dry INSANELY fast, so replacing some of the Vodka with the Dinkydoodle color makes the airbrushing dry super fast).  This is important for step 2, which is Clean the stencil, dry the stencil, and FLIP THE STENCIL OVER to airbrush dots in a second color (in Jenna's case, Metallic Gold, made the same way as the silver with Vodka, Gold Powder and Dinkydoodle Gold Airbrush Paint).
Now, if you're only doing two colors of dots, you're done.  And you can just use our Lots of Dots Stencil.
But, if you're Maid of Honor level decorating, you have to add a third color, so you'll want to buy the Lots of Dots Two Stencil Set .  This set includes a second stencil to give you three different dot layouts.  In Miss J's case, the third stencil was used for Bronze/Rose Gold dots.

Now, check out the whole cake, and one damn-fine looking couple below.  

The Bottom two tiers used our Dissipating Small Dots stencil, which was reversed for the second color, and just shifted a couple of inches for the third.  Clever Girl.

Rose Gold or Gold Roses  
We're getting ready for wedding season with some new stencils inspired by this year's wedding trends.  We all know that Rose Gold and Metallics are big this year, but brides are leaning toward organic-nature inspired patterns too.  That's why we created our latest Rose Abstract Mesh Stencil.   
 This is going to be the Chameleon stencil of the year.  The Evil Cake Genius can't wait to see what you all do with this little number. 
We originally designed it as a hand-painting outline stencil, but once we tested it out, we loved it so much on it's own that we decided to stencil it in our Metallic Gold on this little anniversary cake for one of our favorite clients.  Worlds are colliding!!!  Glamorous metallics with Romantic natural design...who says you can't have your cake and eat it too? 
 And it's so ridiculously detailed and so fast that you won't know what to do with the rest of your day.  "Free"... I'd like to introduce you to "Time" you two haven't met  before have you?

Now let's talk penmanship. 
The Evil  Cake Genius doesn't know about you, but her hands hurt.  Yeah, yeah, can I get you a glass of whine with that...but it's true.  She's been decorating cakes for 20 years, and to be honest, hurty hands or not, her penmanship sucks.  So when a client needs a message on a cake, the Evil one abides...but she uses one of her Genius Alphabet Mesh Stencil Sets to get the job done.  And we've just added a new Relaxed Script Alphabet Mesh Stencil Set to the mix!

It's not as formal as our Script Alphabet Set, and not as structured as our Classic Alphabet set, and nowhere as goofy as our Cartoon Alphabet Set.  The Evil Cake Genius made this one look like what she wishes her handwriting looked like (not the illegible scrawling that her minions make sport of mocking).

It's the Evil Cake Genius... drumroll please...
 
Guide To Metallics
The Evil Cake Genius has spent years trying to match metallic colors to a 1/2" square piece of tablecloth, napkin, ribbon or some other miniscule scrap of nothing from an upcoming event.  Do we look like a CSI's? Well, we're not. So give us something we can work with people! As usual, if you want something done right, you gotta do it yourself, so she did. And of course she's gonna share it with her friends. So here goes. It's a simple guide to Metallics to hopefully help get you get as close as humanly possible to the silver color from that piece of thread that fell off the Mother of the Bride's dress.
 
And YES! We know, these are not food products and are not meant to be eaten. They are however non-toxic, beautiful and safe to use in close proximity to anything that will be eaten. So, any area of the cake which is decorated with these powders should be removed prior to serving (gumpaste flowers, molded fondant, etc). If you're wondering how we decorate the side of a cake and remove the gold or silver powder, you can download our cutting guide HERE. We have ALL of our fondant cakes cut this way for a few reasons. First, it is the safest way to make sure any decoration on the side of the cake that shouldn't be eaten isn't. Second, we've found it to be the absolute best way to cut a fondant cake without making a huge mess. Now, let's take a look at these...

Step away from the Craft Knife!
Marvelous Molds have arrived at Evil Cake Genius! 
If you've tried these molds, you already know that they're truly the best out there.  They have a patented cutting edge that will save you so much time, you'll have to break out your Evil "Bwa ha ha" and the detail...don't get the ECG started.  The tiny facets and depth of these bad-boys will blow your cakey mind! 
What could possibly make these self-trimming molds any better?  What if they were made in the USA? Check! How about if they could tolerate up to 450 degrees Fahrenheit? Check!

This is the mold that started the Evil Cake Genius's obsession with Marina's designs.  The floating borders on this cake are pure glam!  The ECG doesn't even want to think about what these would look like painted as Blue Topaz or Ruby, her head might explode from sheer jewel-y nirvana, so you're gonna have to try it for her (send pics, dear God, please!!)
Marina has designed an impressive line of brooch molds that will work perfectly on any wedding cake, from classic to Art Deco.  How many wedding cakes have you done with a fondant ribbon sash with a brooch that took WAY TOO LONG to make?  Knock it off, get yourself a couple of these, and have a little "me time".  They're life-size, so they're also perfect for any shoe or purse cake!  Once you have them in your kitchen, you'll find that they are your go-to to turn any ordinary cake into something extraordinary in minutes!  Is it hot in here? 
 
She's killing us!!!
That's it, I'm starting to think that this Marina Sousa person is trying to kill the Evil Cake Genius.  No, seriously, the ECG's brain is about to explode with beauty overload!!!
A band of gilded rhinestone-centered jewel-flowers?  If something happens to the ECG, you'll know who to chase after...AVENGE ME!!!  But first, make something with this  Splendor Border Mold, it's too beautiful, the ECG can't die in vain. 
Fabulous Filigree
Oh, that's fair Marina (if that IS your real name).  Just finish the Evil Cake Genius off with Molded Filigree elements that are so detailed and perfect that...wait.

Let's begin today's airing of grievances with CAKE DELIVERIES 
The ECG has been delivering wedding cakes for 20 years.  And she can say with certainty, that nothing tops off an all-night-decorating-session like getting the cake loaded into your car only to have some jerk tailgating your precious cargo like he's whipping around on the Autobahn.  Slow your ass down, Guenther, there's an under-rested, over-caffeinated cake decorator in this car, who's gonna protect that cake like it's her only fricking child, even if it means taking on-ramps at 15 miles per hour and getting passed by bicyclists and stroller-pushing nannies. 
 
But wait!  Lay off poor Guenther...he knows not what he does!! Which is precisely why we bring you our new Cake On Board Car Flags
